Fatty acids profile in meat of Devon young steers, finished in different feeding system | Perfil de ácidos graxos na carne de novilhos superjovens da raça Devon, terminados sob diferentes sistemas de alimentação

The objective of this study was to evaluate the fatty acid profile of meat of Devon steers finished in feedlot, or winter pasture (pasture of ryegrass - Lolium multiflorum Lam), or tropical pasture (association of millet pasture - Pennisetum americanum (L.) Leeke - and alexander grass - Brachiaria plantaginea). At the beginning of finishing the average weight of steers was 320 kg and the age was 15 months. A completely randomized design with three treatments and variable number of repetitions. The roughage:concentrate ratio from feedlot was 60:40. The lipid content of Longissimus dorsi muscle was influenced by the feeding system, the winter pasture showed higher lipid content in comparison to tropical pasture, while the lipid content of feedlot was intermediary. The tropical pasture showed intramuscular fat more saturated in relation to winter pasture, mainly due to the higher participation of C15:0, C17:0 and C20:0 acids. The feedlot and winter pasture animals showed meat with higher content of monounsaturated fatty acids in relation to tropical pasture, but there was no effect of the diet on the total polyunsaturated fatty acids. The winter pasture provided meat with higher conjugated linoleic acid (CLA) and of omega-3 acids in relation to feedlot, while the tropical pasture did not differ from the other two treatments. Pasture finishing provided omega6/omega3 ratio more benefic in relation to feedlot finishing. The winter pasture finishing provided meat with intramuscular fat more benefic in comparison to feedlot finishing, mainly due to higher CLA content, higher omega-3 acids and lower omega-6/omega3 ratio. Tropical pasture finishing resulted in meat with intermediate nutritional value between winter pasture and feedlot.

O objetivo do estudo foi avaliar o perfil de ácidos graxos da carne de novilhos Devon terminados em confinamento, pastagem temperada (pastagem de azevém - Lolium multiflorum Lam) ou em pastagem tropical (associação de pastagem de milheto - Pennisetum americanum (L.) Leeke - e capim papua - Bracharia plantaginea). Foram utilizados 17 novilhos que ao início da terminação apresentavam 320 kg e 15 meses de idade. O delineamento experimental foi o inteiramente casualizado com três tratamentos e número variável de repetições. Os animais confinados foram alimentados com relação volumoso:concentrado de 60:40. Novilhos da pastagem temperada apresentaram maior teor de lipídios no músculo longissimus dorsi do que os da pastagem tropical, sendo que o teor de lipídios da carne dos confinados não diferiu dos demais. A pastagem tropical proporcionou gordura intramuscular mais saturada do que a temperada, principalmente pela maior participação dos ácidos C15:0, C17:0 e C20:0. Os animais terminados no confinamento e na pastagem temperada apresentaram carnes com maior teor de ácidos graxos monoinsaturados em relação aos da pastagem tropical, porém não houve efeito da dieta sobre o total de ácidos graxos poliinsaturados. A pastagem temperada proporcionou carne com maior teor de ácido linoléico conjugado (CLA) e de ácidos graxos ômega-3 do que o confinamento, já a pastagem tropical não diferiu dos demais tratamentos. A terminação em pastagem proporcionou relação ômega-6/ômega-3 mais benéfica do que a terminação em confinamento. A terminação em pastagem temperada proporcionou carne com gordura intramuscular mais benéfica que a terminação em confinamento, principalmente pelos maiores teores de CLA, somatório dos ácidos graxos ômega-3 e menor relação ômega-6/ ômega-3. A terminação em pastagem tropical resultou em carne com valores nutricionais intermediários entre a pastagem temperada e o confinamento.
