Effects of Rewetting on Milling Quality of Wet Season Japanese Rice | ผลของการเปียกซ้ำต่อคุณภาพการสีของข้าวญี่ปุ่นฤดูนาปี

English. Study on rewetting of wet season Japanese rice after harvest was conducted at Faculty of Agriculture, Chiang Mai University. The rewetting process was simulated by spraying water at different amounts on the paddy which was mechanically dried to the pre-determine moisture contents of 15-21%. The paddy was sprayed with water until its moisture increased 3% and 6%. The grain was kept for 12 hours before redried to 12-13% moisture level and milled. Results of the experiment showed that rewetting of 3% gave no milling quality difference from the unwetted crop both in terms of % head rice and% broken rice. But when the paddy was wetted until its moisture increment was 6% a significantly different head rice yield and broken rice percentage from the control were observed. Moreover, it was found that the paddy moisture content and the amount of water rewetted had interacted effects on milling quality of the Japanese rice. Nonetheless the rewetting effect of 3 and 6% on the rice in wet season not serious since the broken rice yield did not exceed 10% which was commercially acceptable.

Thai. การศึกษาการเปียกซ้ำหลังการเก็บเกี่ยวของข้าวญี่ปุ่นในฤดูนาปี ได้กระทำที่คณะเกษตรศาสตร์มหาวิทยาลัยเชียงใหม่  ด้วยวิธีการจำลองการเปียกฝน โดยการพ่นน้ำให้กับข้าวเปลือกที่ถูกลดความชื้นไปจนถึงระดับที่กำหนดและใช้ปริมาณน้ำในการพ่นที่แตกต่างกัน  ผลการทดลองพบว่า ข้าวที่ถูกลดความชื้นจนเหลือ 15-21% เมื่อพ่นน้ำจนความชื้นเพิ่มสูงขึ้นกว่าเดิม 3% และเก็บไว้นาน 12 ชั่วโมง แล้วนำมาลดความชื้นจนเหลือ 12-13% และนำไปสี จะได้คุณภาพข้าวสารในแง่ 6 ต้นข้าว และ% ข้าวหักไม่แตกต่างจากข้าวที่ไม่โดนฝน แต่ข้าวที่ความชื้นเริ่มต้นเดียวกันนี้ เมื่อเปียกน้ำจนความชื้นเพิ่มขึ้น 6% เป็นเวลา 12 ชั่วโมง เมื่อนำมาลดความชื้นให้แห้งแล้วนำไปสีเช่นเดิม จะมี% ต้นข้าวต่ำลง ในขณะที่ % ข้าวหักเพิ่มขึ้น อย่างมีนัยสำคัญ เมื่อเทียบกับข้าวที่ไม่โดนฝน นอกจากนั้นยังพบด้วยว่า ความชื้นของข้าวเปลือกขณะที่โดนน้ำ และปริมาณน้ำที่ข้าวได้รับมีปฏิสัมพันธ์กันในการทำให้เกิดผลกระทบต่อคุณภาพการสี อย่างไรก็ตาม จากการทดลองนี้พบว่า การที่ข้าวญี่ปุ่นเปียกซ้ำหลังการเก็บเกี่ยวในปริมาณที่ทำให้ความชื้นเพิ่มขึ้น 3 และ 6% จะไม่มีผลต่อคุณภาพการสีมากนัก กล่าวคือ ปริมาณข้าวหักจะไม่เกิน 10% ซึ่งเป็นระดับที่ยอมรับได้ในเชิงการค้า
