تأثیر سطوح ورمی‌کمپوست حیوانی بر خصوصیات بیوشیمیایی و مواد موثره گلبرگ وکلاله زعفران (Crocus sativus L.) | The effect of cattle manure vermicompost on antioxidant activities and active components of Saffron (Crocus sativus L.) stigmas and petals

Persian. مدیریت تغذیه از مهمترین عوامل در تعیین کمیت و کیفیت زعفران به شمار میرود، که در این میان، کودهای آلی نقش مهمی در تولید با کیفیت و ارگانیک زعفران ایفا میکنند. این آزمایش به منظور ارزیابی تاثیر مقادیر مختلف ورمی کمپوست کود حیوانی بر خصوصیات بیوشیمیایی و مواد موثره زعفران گلبرگ و کلاله، در قالب طرح پایه بلوکهای کامل تصادفی در سه تکرار و با کاربرد چهار سطح ورمی کمپوست (صفر، 5، 10و 15 تن در هکتار) در مزرعه تحقیقاتی دانشکده کشاورزی دانشگاه بیرجند در سال زراعی 95-1394 انجام شد. نتایج نشان داد کاربرد ورمی‌کمپوست بر میزان پیکروکروسین (طعم)، سافرانال (عطر) و کروسین (رنگ) کلاله زعفران تأثیر معنی داری داشت، به طوری که بیشترین میزان پیکروکروسین و سافرانال از تیمار 15 تن ورمی کمپوست در هکتار به ترتیب به میزان 37/88 و 17/06 درصد و کمترین آن از تیمار شاهد به میزان 25/78، 8/5 درصد به دست آمد. همچنین تیمارهای مصرف 10 و 15 تن ورمی کمپوست در هکتار، باعث افزایش 60 درصدی میزان کروسین در مقایسه با تیمار شاهد شدند. نتایج نشان داد که میزان فنول گلبرگ زعفران تحت تاثیر تیمار ورمی‌کمپوست قرار نگرفت، اما میزان آنتوسیانین و آنتی اکسیدان گلبرگ معنی دار شد، به طوری که بیشترین میزان آنتوسیانین در تیمار 10 تن ورمی کمپوست در هکتار (16/43میلی‌گرم در100 گرم) و کمترین آن در تیمار شاهد (34/8 میلی‌گرم در100 گرم) مشاهده شد. همچنین بالاترین میزان آنتی اکسیدان گلبرگ در تیمار کاریرد 10 تن در هکتار ورمی‌کمپوست به میزان ( 34/9 درصد) مشاهده شد.

English. This study was conducted to evaluate the effect of different rates of vermicompost manure on biochemical characteristics and active ingredients of saffron based on a randomized complete block design with different vermicompost rates (0, 5, 10, 15t/ha) as treatments in three replications. According to the results, vermicompost had a significant effect on picrocrocin (taste), safranal (perfume) and crocin (color) of content of Saffron. The highest picrocrocin and safranal were gained in 15 t/ha of vermicompost (with 37.88% & 17.06%, respectively) and these lowest were observed in control (with 25.78% & 8.5%, respectively). Also, 10 and 15 t/ha vermicompost, caused 60% increasement in crocin content compared to control. Although petals phenol content was not significantly affected by vermicompost rates, but anthocyanin and antioxidant content of petals were significantly affected. As the highest anthocyanin, content was gained from 10 t/ha of vermicompost (16.43mg/100g) and the lowest was obtained from control (8.34mg/100g). Also the highest antioxidant content of petals was observed in 10 t/ha vermicompost (34.90%). In general, the results of this study showed that the use of vermicompost at the rates of 10 and 15 t per ha can improved the amount of active ingredients of saffron.
