EVALUATION OF TWO VARIETIES OF SORGHUM FOR STARCH EXTRACTION | EVALUACIÓN DE DOS VARIEDADES DE SORGO PARA LA OBTENCIÓN DE ALMIDÓN

In Cuba, the wet milling process for the extraction of starch is made from corn, cereal which is currently imported, that is why it is required to substitute it for another grain of national production as it is the case of sorghum. Given the similarities of the two grains in their starch content and considering the potential of sorghum for the food industry, it is developed in this work an assessment process, taking into account two sorghum varieties: red (CIAPR-132) and white (UDG-110). In this sense, a factorial design of the type 2k-1 is made, where the independent variables of most influence in the laboratory process are considered, such as: (x1) type of sorghum, (x2) soaking time and (x3) solution concentration. It is considered that there is no interaction between them and it is taken as the response variable the starch yield in the extraction process. We conclude that the type of sorghum and soaking time are the most influential variables, obtaining the best results for white sorghum subjected for 48 hours to soak in a solution of SO2 at a concentration of 1800 ppm.

En Cuba el proceso de molienda húmeda para la extracción de almidón se realiza a partir del maíz, cereal que es importado actualmente, por lo que se requiere sustituir por otro grano de producción nacional como es el caso del sorgo. Teniendo en cuenta las similitudes de ambos cereales en cuanto a su contenido de almidón y considerando las potencialidades del sorgo para la industria alimenticia, en el presente trabajo se desarrolla una evaluación del proceso teniendo en cuenta dos variedades de sorgo: rojo (CIAPR-132) y blanco (UDG-110). En este sentido se realiza un diseño factorial del tipo 2k-1, donde se consideran las variables independientes de mayor influencia en el proceso a nivel de laboratorio que son: (x1) tipo de sorgo, (x2) tiempo de remojo y (x3) concentración de la solución. Se considera que no hay interacciones entre ellas y se toma como variable respuesta el rendimiento de almidón en el proceso de extracción. Se concluye que el tipo de sorgo y el tiempo de remojo son las variables de mayor influencia, obteniéndose los mejores resultados para el sorgo blanco sometido durante48 horas al remojo en una solución de SO2 a una concentración de 1800 ppm.
