Ergothioneine: active principle of potential use in the agri-food and medical-pharmaceutical industry | Ergotioneina: principio activo de uso potencial en la industria agroalimentaria y médico-farmacéutica

English. Ergothioneine (ERG) is a water soluble amino acid, it is a strong and stable antioxidant. It has the ability to form complexes with metal cations helping to prevent the generation of ROS, it protects cells from oxidative stress. ERG has received much attention as a therapeutic agent due to its chemical properties, it accumulates in certain organs where its effect is required, it has possible physiological functions as a cytoprotector with successful results in vitro and possible in vivo when analyzed on animal models, it acts in lung injury, hepatorenal dysfunction, and ischemia/reperfusion injury in the liver and small intestine and has potential beneficial effects on vascular health. ERG exerts a protective effect against UV radiation, protects the skin from oxidation and DNA damage, protecting the mitochondrial membrane against oxidation. Much of the skin damage from UV radiation is mediated by the generation of ROS. The objective of this review was to deepen the knowledge of recent advances in the properties of ERG, its quantification and the main properties that this component has to be used as an active principle in the agrofood and medical-pharmaceutical industry due to its role as possible therapeutic agent and powerful antioxidant.

Spanish; Castilian. RESUMENLa Ergotioneina (ERG) es un aminoácido soluble en agua. Es un fuerte y estable antioxidante.Tiene la capacidad de formar complejos con cationes metálicos, ayuda a prevenir la generación de ROS y protege las células del estrés oxidativo. La ERG ha recibido mucha atención como un agente terapéutico debido a sus propiedades químicas, se acumula en ciertos órganos donde se requiere su efecto, tiene posibles funciones fisiológicas como citoprotector con resultados exitosos in vitro y posibles in vivo al ser analizados sobre modelos animales. Actúa en la lesión pulmonar, disfunción hepatorenal y lesión por isquemia/reperfusión en el hígado y el intestino delgado y presenta posibles efectos beneficiosos en la salud vascular. Además, ERG ejerce un efecto protector contra las radiaciones UV, protege la piel de la oxidación y daño al ADN, y la membrana mitocondrial contra la oxidación. Gran parte del daño de la piel por la radiación UV está mediado por la generación de ROS. El objetivo de esta revisión fue profundizar en los conocimientos sobre los avances recientes de las propiedades de la ERG, su cuantificación y las principales propiedades que tiene este componente para ser utilizado como principio activo en la industria agroalimentaria y médico-farmacéutico debido a su función como posible agente terapéutico y potente antioxidante.
