Impact of pressing time on microstructural parameters of goat cheese

English. Artisanal goat's milk cheeses are an important source of macronutrients such as proteins and lipids and are considered part of cultural heritage. In the State of Veracruz there are climatic and vegetation conditions suitable for the development of intensive and semi-intensive goat production systems (SPC) that allow the production of fresh and matured artisanal cheeses on a small scale. However, the different stages of cheese production play a determining role in its final microstructure. For example, the use of different levels of pressure can induce changes in the microstructure of the cheese and impact the release of volatile compounds responsible for the flavor and physicochemical and functional properties in cheeses. The microstructure of cheeses are a porous medium for the mass transport of water and volatile compounds. However, the complexity of the microstructure can be quantified using different mathematical algorithms such as Feret maximum diameter (Feretmax), Geodesic diameter (Geodiam), Geodesic elongation (Geoelon) and Tortuosity (τ). Currently, goat cheeses from the state of Veracruz lack studies that demonstrate the impact of pressing time on the final microstructure of goat cheeses. For all of the above, the objective of this research is to determine the impact of pressing time on the microstructural parameters of two types of goat cheese from the State of Veracruz.

Spanish; Castilian. Los quesos artesanales de leche de cabra son una fuente importante de macronutrientes como proteínas y lípidos y son considerados parte del patrimonio cultural. En el Estado de Veracruz se tiene las condiciones climáticas y de vegetación aptas para el desarrollo de sistemas intensivos y semi-intensivos de producción de caprinos (SPC) que permiten producir en pequeña escala quesos artesanales frescos y madurados. Sin embargo, las diferentes etapas de producción de los quesos juegan un papel determinante en su microestructura final. Por ejemplo, el uso de diferentes niveles de presión puede inducir cambios en la microestructura del queso e impactar en la liberación de compuestos volátiles responsables del sabor y las propiedades fisicoquímicas y funcionales en los quesos. La microestructura de los quesos son un medio poroso para el transporte masivo de agua y compuestos volátiles. Sin embargo, la complejidad de la microestructura puede cuantificarse usando diferentes algoritmos matemáticos como Diámetro máximo de Feret (Feretmax), diámetro Geodesico (Geodiam), elongación Geodesica (Geoelon) y Tortuosidad (τ). Actualmente, los quesos de cabra del estado de Veracruz carecen de estudios que demuestren el impacto del tiempo de prensado en la microestructuta final de los quesos de cabra. Por todo lo anterior, el objetivo de la presente investigación es determinar el impacto del tiempo de prensado en los parámetros microestructurales de dos tipos de quesos de cabra del Estado de Veracruz.
