Development of modern technological solutions for the primary processing of squid | Разработка современных технологических решений первичной обработки кальмара

English. There are presented data on an industrial coagulation-free method for cleaning squid. The relevance of squid skinning technology development is due to modern market requirements and the desire to increase production efficiency. Innovations in this area can not only improve the quality of seafood, but also contribute to the sustainable development of the fishing industry. The purpose of the work is to develop modern technological solutions for squid skinning. The object of research is the industrially caught schoolmaster gonate squid (Berryteuthis magister). Based on the analysis of existing methods for cleaning squid, a technology for skinning squid is suggested. In the experiments, a 0.5% solution of the enzyme preparation Profitex Fish Skin Lux was used. It is established that the temperature of the working solution for industrial squid processing should not be lower than 42°C, the processing time should not exceed 2 min. Squids are unloaded into a container with water and ice, mixing thoroughly. The temperature of cold water with ice, as well as its volume, act as a reaction inhibitor and protect the shelled squids from further enzymatic destruction of tissues. The completion of the cooling and washing step should be considered to be reaching the temperature of shelled squids of 0...+5°C. The finished product obtained at this temperature, has high consumer properties, the squid glitters, it has a light white shade. The results of studying the amino acid composition have shown that squid proteins contain all the essential amino acids. A high content of amino acids such as leucine (8.05 mg/100 g) and lysine (7.80 mg/100 g) is noted, and the amounts of threonine and valine are very close to the reference value recommended by the FAO/WHO. The suggested technology of skinning squid has great prospects for improving production processes in the fishing industry, thereby increasing the efficiency and improving the product quality.

Russian. Представлены данные о промышленном бескоагуляционном способе очистки кальмара. Актуальность разработки технологии обесшкуривания кальмара обусловлена современными требованиями рынка и стремлением к повышению эффективности производства. Инновации в этой области способны не только улучшить качество морепродуктов, но и способствовать устойчивому развитию рыбной отрасли. Цель работы – разработка современных технологических решений обесшкуривания кальмара. Объектом исследований выступает промышленно добываемый кальмар командорский (Berryteuthis magister). В результате анализа существующих способов очистки кальмара предложена новая технология обесшкуривания. В экспериментах был использован 0,5% раствор ферментного препарата Профитекс Фиш Скин Люкс. Установлено, что температура рабочего раствора для промышленной переработки кальмара не должна быть ниже 42 °С, время обработки не должно превышать 2 мин. Кальмаров выгружают в ёмкость с водой и льдом, тщательно перемешивая. Температура холодной воды со льдом, а также её объём выступают ингибитором реакции и предохраняют очищенных кальмаров от дальнейшего ферментного разрушения тканей. Завершением этапа охлаждения и мойки следует считать достижение температуры очищенного кальмара 0…+5 °С. Готовый продукт, полученный при указанной температуре, отличается высокими потребительскими свойствами, кальмар блестит, имеет светлый белый цветовой оттенок. Результаты исследования аминокислотного состава показали, что белки кальмара содержат все незаменимые аминокислоты. Отмечено высокое содержание таких аминокислот, ка лейцин (8,05 мг/100 г) и лизин (7,80 мг/100 г), количество треонина и валина очень близки к эталонному значению, рекомендованному ФАО/ВОЗ. Предложенная технология обесшкуривания кальмара имеет большие перспективы для улучшения производственных процессов в рыбной отрасли, позволяет повысит эффективность и улучшает качество продукции.
