Shelf life of nachos packaged with inert gas using the Real Time Method | Vida útil de nachos envasados con gas inerte mediante el Método del Tiempo Real

English. The work consisted on determining the shelf life of nachos packed with inert gas using the Real Time method. The initial characteristics, storage conditions, statistical estimation, physicochemical, microbiological and sensory analysis of the product were described. The nachos, study subjects, were packed in bioriented polypropylene bags metallized with aluminum, content of 200 g, with inert gas (90-99% purity) and 40-50 lbf / in² of injection pressure; the determining factor of the useful life studied was rancidity. The storage conditions of the packaged nachos were at a temperature of 18-22 °C and relative humidity of 45-51%. The shelf life determined by the Real Time method was 180 days, in which there were no undesirable odors or flavors, related to rancidity.

Spanish; Castilian. El presente trabajo consistió en determinar la vida útil de nachos envasados con gas inerte utilizando el método de Tiempo Real. Se describieron las características iniciales, condiciones de almacenamiento, estimación estadística, análisis fisicoquímicos, microbiológicos y sensorial del producto. Los nachos, sujetos de estudio, fueron envasados en bolsas de polipropileno biorientado metalizado con aluminio, contenido de 200 g, con gas inerte (90-99% de pureza) y 40-50 lbf/in² de presión de inyección; el factor determinante de la vida útil estudiada fue la rancidez. Las condiciones de almacenamiento de los nachos envasados fueron a temperatura de 18-22°C y humedad relativa de 45-51%. La vida útil determinada mediante el método de Tiempo Real fue de 180 días, en el cual no presentaron formación de olores ni sabores indeseables, relacionados a la rancidez.
