Seasonal Variations in Cholesterol Content and Proximate Composition of Indian Mackerel (Rastrelliger kanagurta)

Dietary cholesterol levels are directly linked withrisks of coronary heart disease (CHD). Food labelingis an important parameter for displaying theregulatory and safety level of cholesterol. Quadruplicatesamples of Indian mackerel of different sizeand weight were collected on monthly basis for aperiod of one year and were analysed for cholesterolcontent, proximate composition and nonsaponifiablematter (NSM). Cholesterol content was not steadythroughout the year and varied in relation to sizeand season; was found to be higher at 80.3 mg% andlower at 7.76 mg% during the month of October andDecember respectively. Protein content also showedwide variations throughout the period and thevalues ranged between 11.2 to 28.1%. The moisturecontent showed consistently inverse trend with fatcontent during the period of August to October.NSM content was negligible and undetectable. Nocorrelation was observed between the content ofcholesterol and NSM in fish samples for differentmonths. The results of two way ANOVA showedthat there was a significant difference in cholesterolcontent with in the months (p<0.05).
