Against the backdrop of the slow recovery of the world economy from the consequences of the global financial and economic crisis, the world community is to find a new model of interaction and create new mechanisms for economic development. In the course of integrating the Chinese economy into the world economy, China is ready to assume more international responsibilities and obligations in accordance with its capabilities, including in the field of providing the population with food. The history of reforming the food market in general and the vegetable market in particular began in the PRC in 1978 from the countryside and in 2017 reached the world scale in the framework of creating international economic relations under the project "One belt – one way". The article deals with the development of the vegetable market in China, ensuring safety and high quality standards of vegetables in the country, as well as the direction of international development of China's economic relations in the course of solving the problem of providing the population with food. As a result of the research, the development of the vegetable market in China was revealed.

Selection based on interspecific hybridization of fundamentally new plant forms with a unique combination of genetic material allows expanding the scope of genotypic and phenotypic variability. In this work the comparative analysis of plants of interspecific hybrids of genus Allium L. from various inbred descendants of combinations of crossing of species A. cepa х A. vavilovii and A. cepa х A. fistulosum on selection traits is carried out.Forms were identified: by mass of the bulb more than 100 g; with contrasting coloration of dry cover scales bulbs; by the index of the shape of the bulb; on the resistance to peronosporosis of plants of the first year of vegetation and seed plants; by the number of arrows; height of the arrow; on seed production with a sufficiently high percentage of fertile plants. Plants of interspecific hybrids of onions formed bulbs weighing from 20 to 120 g, with white, golden-yellow, dark golden-yellow, brownish and dark purple color of dry covering scales of a bulb. Plants of interspecific hybrids of onions were flat and round-flat shape of the bulb with the frequency of symptoms ranging from 6.9 to 93.3% and from 11.7 to 93.3%. In a phytopathological evaluation of interspecific hybrids of onions the first year of vegetation identified plants with resistance to downy mildew is from 0 to 4.0 points. Was studied the frequency of occurrence of plants in the progenies weight, colour, bulb type, number, height of the seedstalk, seed productivity and resistance to downy mildew. The increase of genetic diversity in onion plants obtained on the basis of interspecific hybridization, backcrossing and inbreeding is shown.

Melon crops have long been non-traditional crops in the Amur region, being grown in small quantities in household plots, while the climatic conditions of Southern Priamurie are favorable for their large-scale cultivation. The results of the study of 10 samples of watermelon and 4 samples of melons of domestic selection in the conditions of the southern zone of Amurskaya Oblast are presented. According to the evaluation of the collection, 7 samples of watermelon are selected: Start, Graal F1, Fronder, Vektor, Skorik, Rapid, Foton, and 2 samples of melon: Alisa F1 and Lolita. They are characterized by sufficiently early ripeness, high and stable yield of marketable fruits of good taste. These varieties and hybrids are promising for cultivation in the south of Amurskaya Oblast. The characteristics of these varieties are summarized and recommendations for their cultivation are offered.

The success and timing of new varieties largely depend on the correct selection of the source material, representing the initial stage of breeding. This is especially true for plant species that have a two-year development cycle. The purpose of our research was to obtain intraspecific hybrids of chicory root. Research was carried out in the traditional area of growing root chicory – Rostov region of the Yaroslavl region. For testing the breeding process and obtaining promising lines us in 2014, there were direct steam crossing. A total of 14 samples of hybrid seeds were obtained, which were 2015-2016 sown for testing in the nursery source material. The article presents the data on the study of intraspecific hybrids of chicory root, they are evaluated in the nursery of the source material on yield, marketability, root shape, resistance to root rot during the growing season. Production requires varieties with short root, in which the bulk is concentrated in the upper part, combining high yields and resistance to root rot during the growing season. Among the hybrids dominated the cylindrical shape of the root. The conical shape had rooms Г1432 and Г1442 with root length of 20.0 cm, curved short form (16 cm) of root was different sample Г1462. This sample stood out spread sheet outlet with a strong anthocyanin coloration. As the yield of roots separated rooms Г1432, Г1452 and Г1441 (3.6; 3.4 and 3.7 kg/m2, representing a cash consideration of 133.3; and 127.0- 138.6% of the standard).

The article reflects the possibility of using the transformation of raw materials of vegetable type when using lactic acid organisms by the process of fermentation. The authors point out that such terms as salted, soaked and sauerkraut fruits and vegetables are widely used in vegetable processing technology and technical literature. In the canning industry there is a widespread salting cucumbers, tomatoes, pickled cabbage and beets, pickled watermelon and apples. The contamination of fresh cucumbers with lactic acid microorganisms is on average only 3-6%, and fresh cabbage from 5 to 20% of the total number of microorganisms. A significant place in the epiphytic microflora is occupied by putrefactive microorganisms and microorganisms of the genus Coli aerogenes. Contamination of vegetables microflora increases significantly during storage. As a result of the research, it was concluded that the total number of microorganisms on cucumbers that were stored for more than a day increased by 20-60 times and on cabbage with expired cabbage by 3-4 times. The article shows that the use of fermentation is one of the most popular and well-known ways to preserve fruits and vegetables from spoilage. This method relates to microbiological methods of preservation, which is based on the transformation of sugars contained in vegetables and fruits, lactic acid under the action of lactic acid bacteria, initially located on the surface of the processed raw materials. The task of the research was to study the process of directed fermentation of cabbage of white-leaved variety Slava, using strains of lactic acid microorganisms and their consortia, taking into account the degree of their mutual influence.

In the course of research, experiments were conducted to study and describe the biological and economic features of Allium oschaninii O. Fedtsch. and Allium pskemense B. Fedtsch. in the Moscow region. The object of the research was samples of various ecological and geographical origin, obtained from various scientific institutions in Russia and other countries. The landing scheme was 70x30 cm. The area of the registered plot was 5 m2. Repeatability 4 times. Samples of Allium oschaninii O. Fedtsch. II years of life provided an average yield of green feathers at a level (2.85-3.86 kg/m2), and Allium pskemense B. Fedtsch. (2.593.20 kg/m2). Maximum yields were provided by samples No. 3 and No. 6 of Allium oschaninii O. Fedtsch. and samples No.3 and No.5 of Allium pskemense B. Fedtsch.. Correlation analysis showed that high productivity of the green feather is formed, first of all, due to the number of false stems (r = 0.909). Significant influence is exerted by such features as the number of leaves (r = 0.633), leaf length (r = 0.630), and the length of the false stem (r = 0.604). The nutritional value of Allium oschaninii O. Fedtsch. and Allium pskemense B. Fedtsch. is due to the presence of ascorbic acid (19.2-32.6 mg%), carotene (14.9-26.1 mg%) and biologically active substances, including flavonoids (251-325 mg% ), hydroxycinnamic acids, (155-194 mg%). The content of dry substances in the samples of the two onions studied was 10.3-12.7%, sugars 2.8-4.2%. The nitrate content did not exceed 170 mg%.

The effects of different fertilizer rates, irrigation, sowing rate for carrot and red beet were studied in the field condition in food-hills zone of Chechen Republic. The use of N40-80P40-80K40-80 caused the increase in yield from 22.8 to 30.8-33.2 t/ha or by 35-46%, when cultivating a carrot crop. Under irrigation the yield increases by 30-33%. Application of N40P40K40 and maintenance of soil moisture at 70% of moisture rate provoked the improvement in value, market and biochemical characteristics of roots; where the increased contents of dry matter, total sugar and vitamins were observed. The mathematical modeling for the process of yielding abilities and root quality in carrot and red beet showed that highest productivity can be achieved on chernozem soil at Central Pre-Caucasus zone when the level of mineral plant nutrition was N40-60P40-60K40-60. The further increment in fertilizer doses does not bring an improvement to yields and leads to decrease in quality of yields. The increased level of antecedent soil water moisture 70-75% of moisture rates does not raise the yield, on the contrary decreasing at the same time the root quality. The use of mathematical modeling enables to rationally define the fertilizer rates depending on application of irrigation and sowing rates in cultivation of carrot and red beet.

The Third All-Russian Scientific and Practical Conference with the support and participation of the Ministry of Agriculture, the Russian Academy of Sciences and the Federal Agency for scientific organizations took place in Crimea in the Nikitsky Botanical Garden, Crimea on September 3-10, 2017. "Ecological-genetic reserves of selection, seed farming and plant reproduction" forum gathered more than 300 people from 99 organizations throughout Russia. Following the results of the five-day work of the conference, a resolution was adopted: to develop a "State scientific and technical program" aimed at increasing the competitiveness of domestic varieties, seeds, planting stock and technologies in the domestic and foreign markets with the view of long-term development of selection and seed production in the Russian Federation.

Potato and table beet are traditional crops in vegetable growing in Russia. It is important to produce high, environmentally friendly crops. The effect of mineral fertilizers to reduce the accumulation of heavy metals (HM) in beetroot and potatoes was studied in the experiment on ordinary chernozem. The soil was supplied with Cu, Zn and Pb, as a mineral fertilizer, Azofosca (N16%, P16%, K16%) was also used in the experiment. Salts of heavy metals and fertilizer were introduced in accordance with the developed scheme of experiment: 1. Control; 2. Cu100Zn100Pb100; 3. N60P60K60 + Cu100Zn100Pb100. In the soil, the total stock of metals and their mobile forms were determined, and the content of metals and yield were defined in plants. The results of the study showed that for gross forms MRL exceeded in all metals studied, and in mobile forms of Cu and Pb. With the joint application of HM to the soil with fertilizer, the mobility of metals decreased. In the root crops, the excess of MRL for Cu, Zn and Pb was observed. With the joint application of HM with fertilizers, the content of Zn and Pb in the root crops decreased below the MRL. Beet was more likely to accumulate HM than potatoes. The yield of beetroot and potato beets varied greatly in terms of experiment options. Thus, the introduction of HM into the soil significantly reduced the yield of beets. The introduction of fertilizers together with HM contributed to an increase in yield, but for beet, the yield level here was also lower than in the control variant. When growing roots in technogenically transformed conditions, the potato is characterized by sufficiently higher yield stability and does not accumulate toxic amounts of HM on a fertilized ground.
