Objective: The objective was to assess the chemical composition, cholesterol, fatty acid (FAs), and amino acid (AAs) profiles of buffalo cheese, butter, and ghee. Materials and Methods: Buffalo milk (raw) was collected from the Bangladesh Agricultural University (BAU) Dairy Farm, BAU, Mymensingh-2202, Bangladesh. Cheese, butter, and ghee were prepared at the Dairy Chemistry and Technology Laboratory, Department of Dairy Science, BAU, Mymensingh, Bangladesh, and subjected to subsequent analyses. The gross nutritional composition and AAs profile of milk were analyzed prior to the manufacture of cheese, butter, and ghee. The gross nutritional composition of milk and dairy products was analyzed by apply¬ing an automated milk analyzer and the Association of Agricultural Chemists techniques, respec¬tively. The cholesterol, FAs, and AAs contents of cheese, butter, and ghee were determined by the Bangladesh Council for Scientific and Industrial Research, Dhaka, Bangladesh. Furthermore, atherogenic and thrombogenic indices were also calculated using reference equations. Results: The results indicated that the buffalo milk is a good source of first-rate nutrients (dry matter: 16.50%, fat: 7.50%, protein: 3.75%). Findings indicated that the butter was significantly rich with (p < 0.05) total solids and fat where higher (p > 0.05) protein, carbohydrate, and miner¬als were found in cheese. The saponification, Reichert-Meissl, Polenski, and Kirschner values of buffalo ghee were found to be 225, 30, 1.2, and 25, respectively. A significant (p < 0.05) variation was found in the cholesterol content of buffalo cheese, butter, and ghee. Butter and ghee had 40.14 and 39.57 mg more cholesterol, respectively, than cheese. The results revealed identical FA profiles except for C24:0 among the three dairy products where the major FA compositions were C4:0, C14:0, C16:0, and C18:0 and C18:1 cis-9. The atherogenicity index and thrombogenicity index of cheese, butter, and ghee were statistically similar (p > 0.05). Butter was found with the most conducive anti-atherogenic and anti-thrombogenic characteristics due to lower saturated and higher polyunsaturated FAs. However, all the AAs concentrations were statistically higher (p < 0.05) in cheese than in butter and ghee. Conclusion: To conclude, buffalo cheese is superior to butter and ghee as regards nutrient density, but consumers can choose other foods based on their choice. Objective: Most people in Matrouh Governorate consume camel milk as a treatment for many diseases in a raw state to obtain nutritive value. Raw dromedary camel milk can be contaminated by Escherichia coli through fecal matter at any point of milk handling; therefore, it may lose its value and safety specifications. This survey aimed to estimate the incidence of E. coli in fresh camel milk. Materials and Methods: 100 fresh camel milk samples (50 from markets and 50 from farms) were randomly collected from different districts in Matrouh Governorate, Egypt, over 4 months for the detection of E. coli incidence through conventional bacterial isolation, molecular investigation, and gene sequencing. Results: The prevalence rates of E. coli in the examined market and farm raw camel milk based on conventional methods were 24% and 8%, respectively, while those by molecular identification using phoA as an E. coli determinate gene were 4% and 6%, respectively. Moreover, E. coli phoA gene phylogenetic analysis revealed high sequence similarity to E. coli strain CP033158.1 in India and E. coli strain CP047594.1 in China. Antibiotic sensitivity of E. coli isolates showed high suscep¬tibility to norfloxacin (10 μg) and cefoperazone (75 μg). On the other hand, high resistance was found in rifamycin (30 μg) and cefoxitin (30 μg). Conclusion: The results indicate that market camel milk is more contaminated than the farms' own. Additionally, antibiotic resistance is increasing due to antibiotic abuse. [J Adv Vet Anim Res 2022; 9(1.000): 138-143]

Objective: This work investigated the impact of acidified turmeric on growth, blood profile, and gut bacterial counts of broiler chickens stocked in an overcrowding stress condition. Materials and Methods: A total of 285 14-day-old Lohmann broiler strains were distributed to T0 (chicks receiving basal feed raised at a density of 9 chicks/m2), T1 (chicks receiving basal feed raised at 16 chicks/m2), T2 (chicks receiving 1% turmeric powder raised at 16 chicks/m2), and T3 (chicks receiving 1% acidified turmeric powder raised at 16 chicks/m2). Body weight and feed intake were determined weekly. On day 37, blood and intestinal content were collected and analyzed. Results: Body weight was higher while feed conversion ratio was lower in T0 than in other groups. Compared to T0, T1 had a lower thymus weight. Erythrocytes and hematocrits were greater in T0 than in T2 and T3. Hemoglobin was higher in T0 than in T3. Serum superoxide dismutase differed as T0 < T1 < T2. Ileal coliform was higher in T0 than in T1 and T3. Lactic acid bacteria counts were higher in T0 and T1 than in T2 and T3. Conclusions: Acidified turmeric was capable of maintaining the relative weight of the immune organ and ameliorating the oxidative stress of the broiler during overcrowding stress. Objectives: Streptococcus agalactiae is a zoonotic human and animal pathogen that causes global economic losses in aquaculture and fatal outcomes in Tilapia. This study aimed to identify S. agalactiae isolated from different fish sources intended for human consumption phenotypically and genotypically and to characterize the virulence-associated genes fbsA (fibrinogen-binding protein FbsA), cfb (CAMP factor), and pbp1A/ponA (penicillin-binding protein 1A). Materials and Methods: Three hundred Nile Tilapia fish (Oreochromis niloticus) were collected from different farms and retail shops in Dakahlia and Damietta, Egypt, during the summer of 2020. The samples were examined using routine phenotypic methods, then characterized using polymerase chain reaction (PCR) targeting S. agalactiae-specific dltS gene. All S. agalactiae isolates were examined for the susceptibility to ten antimicrobial agents by the disc diffusion method. The virulence-associated genes (fbsA, cfb, and pbp1A/ponA) were characterized using multiplex-PCR. Results: Streptococcus agalactiae was detected in 7% (n = 21/300) samples. The isolates showed high resistance against ampicillin and erythromycin (20/21; 95%) for each. The most predominant antibiotypes through isolates were P, CN, SXT, CRO, TE, CTX, E, AMP, at 10.5% for each antibiotype. A total of 19 (90.5%) of S. agalactiae isolates showed multi-drug resistance (MDR), and those were recovered from market Tilapia fish. The virulence-associated genes (fbsA, cfb, and pbp1A/ ponA) were identified in the S. agalactiae as 100%, 76%, and 52%, respectively. Conclusions: The MDR S. agalactiae detected in raw Tilapia fish pose a significant health hazard to consumers due to their zoonotic characteristics. [J Adv Vet Anim Res 2022; 9(1.000): 95-103]

Objective: The work aimed to assess the safety and quality of broiler meat in experimental liste¬riosis changes in storage. Materials and Methods: Ross Cobb 500 chickens (40) were divided into 4 groups of 10 animals each. Chickens from three experimental groups were infected by Listeria innocua, Listeria ivanovii, and Listeria monocytogenes. Meat samples were stored for 5 days at 0°C–4°C. Meat samples were kept in the refrigerator for 3, 4, and 5 days. Microbiological and laboratory indicators of meat freshness were found on these days as well. Results: After the slaughter of chickens with experimental listeriosis, pathological changes in mus¬cles and organs were noted against the background of fattening carcasses with a high slaughter yield. By bacterial contamination, 1 day after slaughter, the meat of chickens of the experimental groups (L. innocua, L. ivanovii, and L. monocytogenes) outperformed the control group by almost 1.9, 13.9, and 24.7 times, respectively (p < 0.05). The same trend is observed for the third, fourth, and fifth days of meat storage. To keep chicken meat fresh for 5 days, only samples from the con¬trol group stayed fresh. Conclusion: According to the total bacterial contamination, the meat of chickens of the groups L. innocua and L. ivanovii was dangerous to human health after 5 and 4 days of storage, respec¬tively. From the first day after the chickens were killed, the meat of chickens that had been infected with L. monocytogenes did not meet the requirements (up to 100 CFU/gm) and was not safe to store or eat. Objectives: This study aimed to develop a computerized deep learning (DL) technique to identify bacterial genera more precisely in minimum time than the usual, traditional, and commonly used techniques like cultural, staining, and morphological characteristics. Materials and Methods: A convolutional neural network as a part of machine learning (ML) for bacterial genera identification methods was developed using python programming language and the Keras API with TensorFlow ML or DL framework to discriminate bacterial genera, e.g., Streptococcus, Staphylococcus, Escherichia, Salmonella, and Corynebacterium. A total of 200 dig¬ital microscopic cell images comprising 40 of each of the genera mentioned above were used in this study. Results: The developed technique could identify and distinguish microscopic images of Streptococcus, Staphylococcus, Escherichia, Salmonella, and Corynebacterium with the highest accuracy of 92.20% for Staphylococcus and the lowest of 77.40% for Salmonella. Among the five epochs, the accuracy rate of bacterial genera identification of Staphylococcus was graded 1, and Streptococcus, Escherichia, Corynebacterium, and Salmonella as 2, 3, 4, and 5, respectively. Conclusion: The experimental results suggest using the DL method to predict bacterial genera included in this study. However, further improvement with more bacterial genera, especially of similar morphology, is necessary to make the technique widely used for bacterial genera identification. Objective: This study was conducted to determine the colony forming units (CFU) to isolate, identify, and antibiotic sensitivity of Staphylococcus aureus from chicken nuggets (CN). Materials and Methods: Sixty CN samples from two brands were collected from different super¬stores in Mymensingh, Bangladesh. Uncooked, oven-cooked (OC), or gas stove-cooked (GSC) CN samples were inoculated onto mannitol salt agar and blood agar. Results: The total staphylococcal count (TSC) for uncooked CN ranged from log 4.68 to log 5.11 CFU/gm. For OC CN, TSC ranged from log 3.29 to log 3.62 CFU/gm. For GSC CN, TSC ranged from log 3.09 to log 3.49 CFU/gm. Relative to uncooked CN, microwave oven-cooked and GSC samples significantly reduced the TSC of CN (p < 0.01). Using the polymerase chain reaction assay and standard biochemical testing, only 8 out of 60 CN samples contained S. aureus. Staphylococcus aureus were resistant to Ampicillin (100%), Amoxicillin (100%), Oxacillin (75%), Cefixime (87.5%), Doxycycline (75%), intermediately sensitive to Erythromycin (25%), Cephalexin (12.5%), Ciprofloxacin (25%), Gentamicin (12.5%), Doxycycline (12.5%) and sensitive to Oxacillin (25%), Azithromycin (100%), Erythromycin (75%) Cephalexin (87.5%), Cefixime (12.5%), Chloramphenicol (100%), Ciprofloxacin (75%), Gentamicin (87.5%), Doxycycline (12.5%), and Vancomycin (100%). Conclusion: This study reports the first isolation and identification of S. aureus from CN in Bangladesh. GSC CN was better than OC and uncooked CN. Objective: Melilotus officinalis is a plant that grows naturally in northwestern Morocco and could become a promising alternative. The study was carried out to investigate the effects of M. officinalis hay on growth performance, carcass characteristics, and meat quality of goat kids in northern Morocco compared to Medicago sativa. Materials and Methods: Eighteen 3-month-old male "Beni Arouss" goat kids have been divided similarly into two groups. The control group (Luc) received lucerne hay, and the test group (YSClov) received yellow sweetclover hay, both supplemented with concentrate. Average daily gain and dry matter intake were determined during the experiment. After 99 days, goat kids were weighed, and carcass characteristics were determined. Meat quality was evaluated using samples from the semimembranosus (SM) and longissimus thoracis muscles. Results: The addition of YSClov significantly increased ash content (p < 0.001) and fat content (p < 0.01), reduced water holding capacity (p < 0.01), and SM pH 24 (p < 0.05). The YSClov meat was significantly more tender than the Luc meat, with corresponding values of 8.20 and 11.80 kg/ cm² (p < 0.05), while the Luc meat was more tender when cooked. No significant effect was found for the other parameters. The YSClov meat is richer in desirable fatty acids (DFA), while the Luc meat appears to be richer in omega-3 DFA(p < 0.01). Conclusion: Melilotus officinalis hay showed promising results in intramuscular fat, protein content, tenderness, DFA content, and similar growth performance compared to conventional feeds. Objectives: The study's goal was to determine the impacts of drinking saline water on the biochemical parameters of Murrah buffalo. Materials and methods: Twenty Murrah buffalo of both sexes, ranging in age from 6 months to 11 years, were randomly selected. 10 ml of blood samples were collected from each buffalo and processed to separate serums. The supplied drinking water and feed samples were also collected. Blood parameters–glucose, alanine-aminotransferase (ALT), aspartate-aminotransferase (AST), creatinine, urea, uric acid, magnesium, phosphorous, calcium, zinc, potassium, sodium, and chloride–were analyzed. Different clinical manifestations of selected buffalo were also recorded. Results: The buffaloes with skin lesions had higher serum concentrations of AST, creatinine, zinc, sodium, and chloride compared to another group. Significant age effects were found for serum concentrations of glucose (p < 0.05), creatinine (p < 0.01), uric acid (p < 0.001), phosphorus (p < 0.05), and potassium (p < 0.05). No significant age and gender effects were found for AST, ALT, urea, magnesium, calcium, zinc, sodium, and chloride. The serum concentration of creatinine was higher in female buffaloes, whereas the uric acid concentration was lower in female buffaloes compared to males. Conclusion: The blood parameters that were measured and remained within reference ranges show that Murrah buffaloes can adapt to saline water with little to no impairment to their liver and renal functions. The differences in the ages and sexes of the animals within the study groups highlight that mature female buffaloes suffer more from skin disorders and attempt to adjust to exotic conditions by changing the functioning of their liver and kidney. Objective: The study was conducted to determine the effect of inoculants of different types and doses on the nutrient quality and in vitro digestibility of fermented rice bran. Materials and Methods: The study was designed using a completely randomized design with a 3 × 3-factorial pattern. The first factor was the type of inoculum, consisting of Saccharomyces cerevi¬siae (SC), Effective Microorganism-4, and Saus Burger Pakan (SBP). The second factor is inoculum doses, which are as follows: levels 2%, 4%, and 6%. The variables measured included chemical composition, fiber fraction content, dry matter digestibility and organic matter digestibility. Results: The results showed that the type of inoculation treatment and the doses of inoculation did not affect the dry matter (DM) content of fermented bran, and the organic matter content of fermented bran was only affected by the inoculation dose factor (p < 0.05). The highest crude protein and Extract Ether (EE) were obtained in the SBP inoculants, which increased linearly with increasing inoculation doses (p < 0.05). While a significant decrease (p < 0.05) occurred in crude fiber content. The cellulose, hemicellulose, lignin, acid detergent fiber (ADF), and neutral deter¬gent fiber (NDF) fractions were significantly lower in the SBP treatment as the dose increased. The SBP inoculant type produced the highest DMD (p < 0.05) but showed a response that was not different from the SC inoculant treatment for OMD. Increasing inoculation doses of 2%, 4%, and 6% linearly increased the DMD and OMD of fermented bran (p < 0.05). Overall, inoculant application on fermented bran showed an interaction effect except for the components of DM, EE, ADF, NDF, and DMD of fermented bran. Conclusions: It was concluded that the SBP at 6% and their combination resulted in the best chemical quality and digestibility of rice bran. [J Adv Vet Anim Res 2022; 9(4.000): 625-633]
