Growing interest of consumers in healthy eating has provided the development of new range of food. Therefore the task of research was to determine the nutritional value, calculate energy value and investigate the sensory properties of yoghurt samples enriched with flakes from biologically activated hull-less barley grains and malt extract. Results showed that by adding flakes from biologically activated hull-less barley grain and malt extract it was possible to improve the nutritional value of yoghurt, i.e., increased protein, carbohydrate and decreased fat content. The energy value of yoghurt samples enriched with flakes from biologically activated hull-less barley grain and malt extract ranged between 65.96 and 75.72 kcal 100 gE-1, which is significantly lower comparing with mean energy value of commercial yoghurts. The changes of sensory properties were affected by the amount of added malt extract in yoghurt samples. The optimal amount of added malt extract for sensory evaluation in yoghurt samples was determined as 2%. The content of carbohydrate in yoghurt sample enriched with 5% of biologically activated hull-less barley grain and 2% of malt extract was two times lower than commercial yoghurts therefore its energy value was significantly lower. Yoghurt enriched with flakes from biologically activated hull-less barley grain and malt extract could be competitive.

This article presents data on veterinary and sanitary evaluation of cows’ (Bovis) meat infected by leptospirosis. The material for the study was a sample of muscle tissue of m. longissimus dorsi taken at slaughter of 10 cows (Bovis) kept on farms in Almaty region. The following parameters have been examined in muscle tissue: water, protein, fat, ash, amino acid composition. Besides the biochemical studies we also measured pH of meat, put the reaction of neutral formalin (Formalin test) and determined the biological value of meat. It was determined that physical and chemical characteristics of sick animal meat have significant deviations from the norm. Such meat rapidly accumulates products of protein decay. The amount of essential and nonessential amino acids decreases, which indicates low nutritional value of meat. Meat of cattle infected by leptospirosis concedes by nutritional and biological value comparing to meat of healthy animals.

Celiac disease is an autoimmune enteropathy disease, triggered in genetically susceptible individuals by ingested gluten from wheat (Triticum), rye (Secale cereale), barley (Hordeum vulgare) and other closely related cereal grains. The only way of the effective daily treatment is a strict gluten-free diet. From the investigation of products available in the local market, it was found that Latvian producers do not offer gluten-free products. The aim of this research was to study a celiac patient’s attitude to gluten-free product quality and availability in the Latvian market and purchasing habits. The survey was designed using website www.visidati.lv, and a questionnaire was sent to people suffering from celiac disease. The respondents were asked to fill in the questionnaire from the beginning of December 2010 till the end of July 2011. The questionnaire was performed with 131 celiac patients, respondents were from all Latvian regions and they answered 15 questions. One of the most important questions was aimed to find out consumers’ opinion about quality of gluten-free products, consumption patterns of gluten-free products, and, moreover, their interest in products made in Latvia. Respondents were asked to name gluten-free products they mainly buy and give specific purchase locations, evaluate the quality of products and necessity for products produced in Latvia. The results of questionnaire show that the consumers are satisfied with the quality of gluten-free flour, flour blends and pasta, but are not satisfied with the quality of bread and confectionery available in the Latvian markets.

Salty snacks are popular appetizers consumed between meals and are one of favourite components of menu at different social gatherings and private celebrations. Consumers base their choice of snacks not only on flavour and smell of product, but also on different kinds of parameters like colour, texture and nutritional value as well as other information labelled on packaging. Typically salty snacks are associated with potato (Solanum tuberosum) crisps, but in present paper there were viewed also vegetable crisps and snacks. The aim of this research was to evaluate nutritional value and physical quality of potato and vegetable crisps and wholegrain snacks in Latvian market. From January to March 2017, 22 potato and vegetable crisps and wholegrain snack samples from Latvian market were analysed. For all samples, information on the labels was analysed as well as salt content, thickness, crispness and colour using standard methods. For 31.8% of the investigated samples, presented information on label and determined salt content do not differ significantly (p is greater than 0.05). That means that 68.2% of the analysed potato, vegetable crisps and snacks on the packaging labels have represented incorrect salt content. Positive moderate correlation (r = 0.489) between potato and vegetable crisps thickness and crispness was found out. Raw materials and ingredients of samples directly impact colour values. If a sample contains beetroot, the colour results would indicate dark red. All potato crisps colour values point out light yellow colour.

Honey is a naturally supersaturated sugar solution, which tends to crystallize. The crystallization of honey can lead to unwanted fermentation that can have a negative impact to honey quality. The production of honey powder could be an alternative method to prevent honey from fermentation. Honey powder could be used as alternative substitute to liquid honey that would allow to use this product more widely in the food industry. α-amylase activity is one of the most important parameters to evaluate the quality of honey. The aim of this study was to investigate the effect of freeze-drying and spray-drying on honey α-amylase activity. Detection of α-amylase activity was carried out by spectrophotometric method. High-performance liquid chromatography was used to determine the content of hydroxymethylfurfural in the powders. The obtained results showed that both drying methods had a negative impact to the enzyme activity in the samples. The lowest activity of α-amylase (8.3 DN) was measured in the spray-dried honey powder. Concentration of hydroxymethylfurfural (HMF) in the powders did not exceed required concentration 40 mg kgE−1.

Specialty coffee, according to Specialty Coffee Association of America (SCAA) standards, is coffee which has been standardized from the coffee plantation process until its delivery to the consumer, in compliance with all quality standards, to highlight the characteristics of the beverage. With increasing coffee consumption, more attention is focused not only on the flavour and texture of the drink, but also on the impact of coffee on health. The beneficial effects of coffee on human health are mainly based on a wide range of biologically active components. The coffee composition of the biologically active compounds and flavour compounds are influenced differently by almost all technological processes. The aim of this review was to summarize recent scientific developments about composition of aroma, flavour and biologically active compounds in specialty coffee and evaluate the best possibilities to balance health promoting and flavour attributes. Specialty coffee mainly focuses on fruity, floral, sweet and acidic notes in coffee, which are opposite to phenolic compound aroma characteristics during roasting process. In conclusion, roasting temperature significantly influences all biologically active compounds and important aroma, flavour volatiles in coffee. All compound concentration, except coffee melanoidins, decreases during roasting process. Light-medium roast level could provide stability among floral, fruity aroma, flavour notes and biologically active compounds (phenolic compounds and coffee melanoidins) in coffee.

The aim of the present study was to analyse and compare camel milk powder quality and functional properties produced with spray-drying and freeze-drying techniques. Freeze-drying is recognized as an advanced method for the production of high-quality dried products, but it has been a costly process for production of camel milk powder. Spray-drying and freeze-drying of camel’s milk demonstrated that the nutritional characteristics of this product basically remained unchanged compared to fresh milk. The differences were found analysing flowability, solubility and hygroscopicity of camel milk powder samples obtained with freeze-drying and spray-drying technique. Analysed quality indices of camel milk demonstrated that spray-drying has lower impact on camel milk powder physical properties in comparison with freeze-drying.

Smoked sprats (Sprattus sprattus balticus) from the Baltic Sea are one of the most popular processed fish products in Latvia. The amount of catching and demand is annually increasing. For producers, it is important to provide stable quality throughout the year, which sometimes is challenging due to many factors. Smoked fish quality depends not only on the seasonality, but also on the applied technologies. The aim of the current study was to review research findings about factors affecting the smoked fish quality. The databases of Science Direct, Web of Science, Wiley Online Journals and Google Scholar were searched. The first parameter that affects quality of fish till processing is raw material, its catching place and season, as well as whether it is fresh or frozen fish, that includes not only microbiological parameters, but also physical and chemical changes in fish depending on the storage conditions. The second parameter is the applied pre-treatment methods (using salt, acids) before processing, which can improve fish texture and make better result for smoked fish. The third parameter is the used technology for the fish processing, heat treatment methods use of wood chips or liquid smoke, or adjustment of smoking conditions. These all together make a lot of sensorial and textural changes in the final product. If any of these parameters is changed during processing, they can affect the smoked fish quality. Therefore, to ensure constant quality of smoked fish, in-depth knowledge of parameters is extremely important.

Study has been performed in fish processing plant ‘X’ with an aim of on purpose to investigating the influence of salt treatment on yield and quality of frozen cod loins. Samples were soaked in 0.8, 1.2, 10% NaCl concentrations in brine before being frozen. In this study, the cod loin’s weight loss during refrigeration, defrosting and cooking was calculated and sensory analysis was carried out. It was found that the soaking in brines affected higher weight of cod loins after freezing. In the control group it decreased by 1.14%, but the S0.8, S1.2 and S10 groups had the weight gain, respectively 3.41, 4.72 and +4.78%. Although after the defrosting and cooking the control group had the lowest weight losses, considering the losses of all operations, it was found that the largest weight loss was in the control group and in the S0.8 group, respectively 31.19% and 31.29%, while the lowest in the S1.2 and S10 groups – 30.49 and 30.06% (p is less than 0.05), respectively. Salt treatment did not affect the taste and odour, but improved the cod loin’s texture properties. Based on these results, salt treatment is considered as an effective way to improve the yield and quality of frozen cod loins.

The main direction of using wheat grains is grinding them into low-extraction flours. The flours collected from individual passages differ in terms of chemical composition and physical properties, which in turn differentiates their baking value. The aim of the study was to evaluate the baking value of passage flours obtained from the milling of spring and winter wheat grain. Wheat grain was milled in a 6-pass laboratory mill MLU-202 by Bühler. The baking value of the obtained passage flours was evaluated by an indirect method (protein content, gluten content and quality, falling number, farinograph analysis) and by a direct method (by baking and performing quality evaluation of the obtained bread). The research showed that the efficiency of flours from individual milling passages varied. The passages flours differed significantly in terms of chemical composition and baking value. The highest flour yields were obtained from the first and second grinding stages, while the smallest from the third grinding stage. Ash and total protein content, flour water absorption, and amylolytic enzymes activity increased together with the subsequent milling stage in both reduction-passage and grinding-passage. The gluten content increased with the next reduction stage, while it decreased with the subsequent grinding passage. The bread from the laboratory baking test was diversified in terms of sensory characteristics, loaf volume, and crumb porosity. The best quality bread was obtained from flour from the first two reduction passages. The lowest quality bread was obtained from flour from the final grinding passage.
