Degradation Kinetics of Anthocyanins in Shalgam Beverage

This research was performed to elucidate the effects of temperature on the degradation kinetics of anthocyanins in shalgam beverage. Shalgam beverage was produced according to traditional production method. Then, it was kept at three different temperatures (65°C, 75°C, and 85°C) for 12 hours, and the relevant quantities of anthocyanins were determined thereafter. The research revealed that degradation of the anthocyanins was well described with a 1st-order reaction kinetics model and the R2 values varied in the range of 0.9059-0.9715. Activation energy of the reaction was determined to be 48537 Joule/mole. The half-lives of anthocyanins at 65°C and 75° C, and 85°C were found to be 138.63, 136.72, and 51.57, respectively. Compared the half-life periods at different temperatures, anthocyanins were found to be more resistant at 65°C and 75°C than at 85°C.

Purple sweet potato (PSP) serves as a potential source for dual functionalities of resistant starch (RS) and antioxidants. This study aims to evaluate the effects of pullulanase enzyme on these functionalities. Results showed that the incorporation of pullulanase into PSP powder could significantly increase the RS content from 3.06 g/100g to 7.11 g/100g. However, total anthocyanin content and DPPH radical scavenging activity reduced significantly, due to the interference from RS fragments on anthocyanins. Securing both functionalities (RS and antioxidant) within the same sample is seemingly impossible. A compromise between RS and antioxidant properties in coloured, starchy plant powders is recommended.

In Turkey, three species of mulberries, white (M. Alba), black (M. Nigra), and red-purple (M. Rubra) are grown commonly. These widely can be consumed fresh as well as dry. However, its rapid post-harvest decay raises major concerns about the sustainability of the fruit for both food and economic purposes. In this regard, besides the fresh consumption of black mulberry fruit, it can consume as dried it also offers an alternative way. In this study, it was aimed to compare some quality parameters in fresh and dry samples of Morus rubra fruits grown in Tokat. It was applied different temperatures to Morus rubra fruits that at collected in two different maturity levels (semi-ripe and full-ripe). In the drying process, mulberry fruits were dried in a hot air dryer at 40, 50, 60, and 70°C. Total phenol, Total phenol, total monomeric anthocyanin, total antioxidant capacity, colour values (L, a, b) chroma, hue (ho), and browning indices values will be measured in fresh and dried products. In the study; fruit skin color parameters, fruit flesh firmness and total soluable solid (TSS) ratios, as well as total acidity, total phenolic substance, total monomeric anth°Cyanin amounts and total antioxidant capacity were determined. After the fruits were harvested, they were immersed in three different doses (0-2-4%) of calcium chloride (CaCl2) solution for 5 minutes. The fruits removed from the solution were kept to dry. The fruits were stored for 14 days in a cold store with a temperature of 1-2°C and a relative humidity of 90±5%. Before the storage and on the 7th and 14th days of storage, the fruits samples were taken and kept on the shelves in the rooms with a temperature of 21±1°C and a relative humidity of 60±5%for 3 days. Measurements and analyses of fruit quality parameters were made in the samples taken from the fruits that were kept on the shelf for three days. As a result of the study, it was determined that 4%CaCl2 application was effective in maintaining fruit flesh firmness. In fruits kept on the shelf for 3 days after 14 days of storage, SSC of 4%CaCl2 treatment was found to be higher than the control treatment. Compared to the control, 4%CaCl2 caused a significant increase in the total phenol content. The highest total monomeric anth°Cyanin content and total antioxidant capacity was determined in the control treatment. While there were no significant changes in L* values between treatments, a* and b* values were found to be higher in 2%CaCl2 treatment. In the light of the data obtained, it was concluded that 4%CaCl2 application had a positive effect on the shelf life of strawberry fruits.

The objective of this study was to develop and characterize a pH indicator based on chitosan (C) and starch (S) including anthocyanins from eggplant to indicate food quality changes through the detection of changes in the pH of packaged food products. Anthocyanins were extracted with solvents including ethanol and water (7:3, V:V) (EgP-E) and water (EgP-W) in acidic pH. The pH indicator films were obtained incorporating anthocyanin as 1.5 g extract/100 g film solution. The optical, mechanical and water vapor permeability properties were used to characterize the pH indicator films. The total monomeric anthocyanin content and phenolic content of extract solutions were also determined. Color variations of pH indicator films were measured by a colorimeter after immersion in different pH buffers (pH 2.0–10.0). Initially, dried C films and S based films were observed in a violet color and a magenta color, respectively. C and S films with anthocyanins showed color variations from pink (in acidic pH) to bluish-green (in neutral pH) and to violet (in basic pH) in different pH values. The water vapor permeability of films with anthocyanins was higher than films without anthocyanins. Dracocephalum moldavica L. has been used as both treatment of coronary heart disorders and food supplements. In the present study, determination of total phenolic and flavonoid content in methanol, ethanol and methanol/ethanol extracts of leaf was studied in Iranian Moldavian balm for the first time. Antioxidant activity of the studied plant was also measured. The methanol extract had the highest phenolic and flavonoid content, anthocyanin, DPPH and H2O2 radical scavenging activity. The ethanol extract showed the least amount of all. The methanol/ethanol extract showed the highest amount in two oxides including nitric and superoxide radical scavenging activities; it also showed the highest Ferric Reducing Ability Power. The obtained chromatograms of the plant using High Performance Liquid Chromatography showed that the highest and the lowest found phenolic compounds were caffeic acid and vanilic acid, respectively. The results show that this plant is a suitable natural antioxidant to reduce the oxidative stress in human being.

Butterfly pea flower (Clitoria ternatea L.) is a tropical plant that is rich in bioactive compounds, especially anthocyanins which are useful as natural dyes and antioxidant compounds. The bioactive compounds of butterfly pea flowers are unstable due to environmental influences, especially temperature, oxygen, light and acidity. In order to improve the stability of bioactive compounds, especially anthocyanin compounds in powder form, it is necessary to utilize encapsulation technology using coating materials. The aim of this research was to determine the effect of maltodextrin concentration and drying temperature on the physico-chemical characteristics and color measurements of encapsulated butterfly pea flower extract. The research method used was a factorial design prepared using a randomized block design consisting of 2 factors. Factor I (maltodextrin concentration) consisted of 3 levels, namely (10%, 20%, and 30%) while factor II (drying temperature) consisted of 3 levels (70ºC, 80ºC, and 90ºC), with 3 repetitions. The observation variables are: a) antioxidant activity, b) anthocyanin content, c) water content, d) dissolution time, e) color properties (L*, a*, and b*). Based on general research results, a maltodextrin concentration of 10% and a drying temperature of 70ºC showed the best results based on antioxidant activity rate and the highest anthocyanin content (51.47% and 47.36mg/g), as well as color measurements with the lowest L* value = 52, highest a* value = +2.6, and highest b* = -11.16. Except for powder solubility, a maltodextrin concentration of 30% and a drying temperature of 90ºC resulted in the fastest solubility time (16.67 seconds). For water content, all treatments were still in accordance with spice standards in Indonesia and standards issued by the USDA.
Show more [+] Less [-]Effect of Fenugreek Gum and Eggplant Peel Extract on Physicochemical, Storage, Bioactive, and Sensory Properties of Dairy Dessert

The objective of this research was to examine the impact of fenugreek gum and eggplant peel extract on multiple characteristics of rice pudding, encompassing parameters such as total soluble solids content, pH, color, syneresis index, storage stability, total phenolic content, antioxidant activity, flavonoid, and anthocyanin content, along with a sensory evaluation using a 5-point hedonic scale. Different concentrations of fenugreek gum (0%, 0.2%, 0.4%) and eggplant peel extract (0%, 0.25%, 0.5%) were prepared and incorporated into the rice pudding formulation at varying levels. Higher concentrations of fenugreek gum and eggplant peel extract in the pudding resulted in improved syneresis percentage (68.25±0.42%). This result shows reduced water release and improved storage stability. The addition of fenugreek gum also positively associated with increased storage stability, while eggplant peel extract had no significant effect. Furthermore, while the content of monomeric anthocyanins, total phenolics, total flavonoids, and antioxidant activity in the rice pudding samples increased with higher concentrations of eggplant peel extract, consumer acceptance scores were reported to be very low.
