The Effects of Microwave and Thermosonication Applications on the Quality in The Pasteurization of Orange Juice

The aim of the study was pasteurization of orange juces using microwave, thermosonication and traditional methods and comparing the quality properties. In this study thermosonication, microwave (540, 720, 900W), and traditional pasteurization methods were used for pasteurization of orange juice at 85°C. Pectin methlyesterase enzyme inactivation and Vitamin C, colour, total phenolic content, total carotenoid content were measured. It was determined that the processing times of orange juices pasteurized by traditional, thermosonication and microwave were 180, 120, and 60-85 s, respectively. The highest pectin methlyesterase enzyme inactivation (%95.64) was found after the microwave pasteurization at 900 W. The loss was found in the total phenolic content of orange juice was 6.15% by thermosonication process, whereas this loss was 16.11% by traditional method compared to fresh orange juice. The total colour difference was found the lowest in thermosonication application with a value of 7.98, and the highest vitamin C content (52.52 mg/100 mL) was detected in the microwave pasteurization group of 540 W.

In this study, plant growth, yield and sprout quality were investigated by planting at three different periods in three different Brussels sprout varieties in Çukurova Region. In this research, the effects of four different sowing and planting times on plant height (cm), main shoot diameter (mm), leaf number (number/plant), yield (g/m2), sprout weight (g), sprout diameter (mm), sprout height (mm), vitamin C (mg/100 g), antioxidant capacity [μmol trolox equivalents (TE)/g] and total phenolic content [mg gallic acid equivalent (GAE)/100 g] were investigated in Franklin Fı, Maximus Fı and Divino Fı Brussels sprout varieties. According to the research results; Maximus Fı variety was found to be longer, thicker and more leafy than the other varieties in terms of plant height, main shoot diameter and number of leaves. Based on yield, Maximus Fı variety was recorded to be more efficient (584.88 g/m2) than the other varieties (367.97 g/m2 and 259.82 g/m2 in Franklin Fı and Divino Fı, respectively). Maximus Fı was superior than the other Brussels sprout varieties, Franklin Fı and Divino Fı in terms of sprout weight, sprout diameter and sprout height. When the planting times were evaluated, it was recorded that the 1st period was more suitable in terms of both yield and sprout characteristics compared to the other periods. In the vitamin C content, antioxidant capacity and total phenolic content, Franklin Fı was showed higher rates than the other varieties and more nutrient content was detected in the late plantings.
Show more [+] Less [-]Determination of Yield and Some Fruit Quality Characteristics of the Festival and Camarosa Strawberry Cultivars Grown in Aydın/Sultanhisar Conditions

The aim of this study was to determine the yield and various quality characteristics of two different strawberry cultivars (Fragaria x ananassa var. Festival and Camarosa), grown in the ecological conditions of Sultanhisar, Aydın, Turkey. The study was conducted over two years, in ten randomly selected open grown plantations for each of the two cultivars. When the fruits reached harvest maturity, they were harvested and their yield values, mean fruit weight, fruit diameter, fruit length, fruit firmness, colour, pH, titrable acidity, water-soluble dry matter, vitamin C content, total antioxidant capacity and total phenolics were determined. According to the results obtained, yield values fell in the second year of the study, but mean fruit weight, diameter and length increased. Similarly, the fruit firmness of both varieties was considerably greater in the second year, and these differences between the years were found to be statistically significant. While the highest antioxidant capacity and phenolic content were obtained from the Festival cultivar, the highest vitamin C content was found in the Camarosa cultivar. The changes of total antioxidant capacity and the amount of total phenolics according to years of both varieties were found to be statistically significant.
