Lebanese Consumer Perception towards Moringa Oleifera : Sensory Evaluation of Moringa Oleifera Fortified Labneh

Labneh is one of the most consumed dairy products in the Lebanese community, on breakfast, as a snack or on dinner, plane or mixed with herbs. Its various health benefits plus its acceptability among people makes it an important part of the Lebanese diet. In both its synthetic and homemade forms, several additives are usually incorporated to enhance its flavor and offer a variety of tastes. The problem with Labneh is its short shelf life, as well as its sensitive sensory profile. That is why most industries mix chemical additives with Labneh to prolong its shelf life and conserve its taste. The aim of this research is to preserve Labneh naturally by adding Moringa Oleifera dried leaves to extend its shelf life and inhibit rapid spoilage. Working on a natural preservation of Labneh instead of chemical preservation will be assessed by the survey’s results and prepare for studying the overall acceptability of the product by making a sensory analysis. The results of the questionnaire showed that the Lebanese community which is not totally aware of Moringa Oleifera benefits and availability, is willing to try fortified Labneh with Moringa as a new product with extended shelf life and more health benefits. The results of the sensory analysis showed that the sensory attributes of the samples with Moringa after 21 days of storage, where not significantly different than normal plane Labneh, which indicate that adding Moringa did not affect the sensory attributes of Labneh giving it more acceptability to consumers.

Moringa oleifera Lam. is one of the most used plants in traditional medicine because of its high antioxidant properties. The antioxidant value, nonetheless, depends on locality where the plant is grown as well as specific parts on the plant. In this study, a phytochemical and antioxidant activity comparison of M. oleifera leaves, seeds and barks were carried out. Fresh leaves, seeds and barks were collected from 2 to 3 years old M. oleifera trees of Bukavu city of South Kivu province in DRC and Masii village of Machackos County in Kenya. A total of 300g of each dried sample powder was mixed with 700 mL of distilled water. Qualitative and quantitative assessment of alkaloids, saponins, phenols, flavonoids, glycosides, terpenoids and tannins were performed following standard methods while the antioxidant activity was assessed using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay. Results indicate that only alkaloids were absent in leaves from Kenya and DRC while phenols, flavonoids and tannins were absent in barks. Glycoside in seeds from DRC had the highest concentration (6.17%) followed by alkaloids in seeds from Kenya (5.56%). There was low concentration of terpenoids and flavonoids in all samples compared to other compounds. The highest extract yield was found in leaves from DR Congo (22.5%) and seeds from Kenya (20%). At the highest concentration (10 µg/mL), leaves from Kenya (88.29±1.12 µg/mL) and DRC (80.17±3.59 µg/mL) had the highest percentage inhibition of reactive oxygen-free radicals but lower than the reference standard (92.63±2.76 µg/mL). Leaves from Kenya (23.59 μg/mL) and DRC (28.67 μg/mL) had the highest IC50 compared to mean values of seeds and barks from the two countries. M. oleifera leaves, especially from Kenya, are recommended as a satisfactory antioxidant but can be substituted with seeds and/or barks in order to alleviate the use of leaves which are overused these days.

The poultry industry in the developing countries is facing some challenges, one of which is an increase in the cost of feed because of high prices of protein and energy sources. Moringa oleifera is a rich source of protein and crude fiber content. The crude protein (CP) content of Moringa ranges from 7.12 to 39.17%. Negligible content of tannins and other anti-nutritive compounds and offers an alternative source of protein to ruminants and non-ruminants. Although rich in nutrients such as protein and minerals, Moringa oleifera is one of those plants that have not been studied for many years. In addition, they are also faced with the problem of the development of antibiotic resistant pathogens due to unwise and excessive use of antibiotics. In this paper, feeding studies made on the Moringa oleifera used in nutrition of poultry and ruminant species have been reviewed.

This investigation was conducted to evaluate the outcome of rice husk biochar on growth performance of moringa. The study was carried-out in a greenhouse for 52 days. Different rates of rice husk biochar (150 to 350 g) was mixed with 500 g of soil. A Randomized Complete Block Design (RCBD) with 3 treatments (each of which was replicated 3 times) was used, giving a total of 12 experimental units. Plant height, stem diameter and number of leaves were assessed for each treatment. Results indicate that rice husk biochar (150 g, 250 g and 350 g) significantly increased the stem diameter of moringa as compared to that of the control 52 days after in the greenhouse. An increase in the number of leaves were observed at 150 g rice husk biochar after 40 days compared to the control. There were significant differences between treatments effects on all the parameters. Different rates of biochar certainly could constitute vital use of fertilizer to improve growth moringa in the nursery.

Diğer hayvancılık kollarında olduğu gibi kanatlı hayvan yetiştiriciliğinde de işletmelerin masraflarının en önemli kısmını yem masrafları oluşturmaktadır. Özellikle, gelişmekte olan pek çok ülkede önemi artan, bulunması zorlaşan ve pahalı hale gelen yem masrafları birçok küçük ölçekli kümes hayvancılığı işletmesinin kapanmasına ve kümes hayvanı üretiminin toplam maliyetinin artmasına neden olmaktadır. Bu durum, kanatlı ürünleri olan tavuk eti ile yumurta fiyatlarının artmasına, gelişmekte olan ve az gelişmiş pek çok ülkede birincil hayvansal protein kaynağı olan kanatlı eti ve ürünlerinin tüketiminin ve alım gücünün düşmesine, yetersiz ve dengesiz beslenme gibi pek çok olumsuz duruma yol açmaktadır. Yem masraflarını düşürmek, dolayısıyla kanatlılardan elde edilen ürünlerin maliyetini azaltmak için alternatif bir yem madde arayışı çok önemlidir. Anavatanı Asya olan Moringa oleifera, besin maddeleri açısından oldukça zengin olan ve soya fasulyesi, mısır gibi geleneksel hayvan rasyonunda kullanılabilen yem maddelerinin bir kısmının yerini alabilecek bitkilerden biridir. Afrika ve Asya’da Moringa oleifera’nın kanatlı performansı ve ekonomik verimlilik üzerindeki etkisini araştıran pek çok araştırma yapılmıştır. Belirli bir oranda Moringa tohumlarının veya yapraklarının rasyona dahil edilmesinin, üretim performansını, et kalitesini, hayvan sağlığını ve refahını artırdığını, ancak daha yüksek miktarlarda kullanıldığında ise hayvanın yaşamını zorlaştırıp, üretim parametrelerinin azalmasına yol açtığı bildirilmiştir. Yapılan çalışmalarda; kanatlı rasyonlarına %5-10 arasında Moringa ilavesinin performansı olumlu etkilediğini gösterirken, rasyona %10’un üzerinde Moringa ilave edildiğinde ise hayvanların performansının kötüleştiğini belirtmişlerdir. Bu derleme, alternatif bir yem maddesi olan Moringa oleifera’nın yapraklarının ve tohumlarının kanatlı hayvanların performansı üzerindeki etkisini belirlemek amacıyla hazırlanmıştır.
