Contribution of Some Agro-Food Processing By-products to Chicken Sausages Full text

In this study, some agro-food processing by-products were evaluated as novel food ingredients, that meet the consumer's demand for natural ingredients, and their contributions to chicken-type sausage production were examined. Sausages were formulated with 3% quince waste (QS3), 3% grapefruit waste (GS3), 2% tomato waste (TS2), and 3% tomato waste (TS3). Other ingredients were fresh breast chicken meat, beef tallow, spice mix, ice, NaCl, and NaNO2. Proximate composition and sensory analyses were conducted before the storage. Water activity, pH, TBARS, purge accumulation, and microbiological analyses were performed during the storage. QS3, TS2, and TS3 treatments got appreciated (7.0-7.4 out of 10) sensory scores, while GS3 scored low acceptability (4.0 out of 10) points. Adding food waste significantly reduced purge accumulation; the average purge accumulation of the control sample was 3.70% which is approximately two times higher than food waste added samples. The average TBARS value of the control sample was determined as 0.31 mg MA/kg, and the food waste-added samples were found between 0.57-0.65 mg MA/kg during storage. Total mesophilic aerobic bacteria and yeast-mold load were higher in TS2 and TS3 products; microbial load and TBARS values of food waste affected the product quality. Also, water activity, microbial growth, and purge accumulation amount affected each other during storage.

This study examines the relationships between authentic leadership perceptions and organizational commitment levels of public personnel working in the agriculture and forestry sector. Within the scope of this research, surveys consisting of ready-made scales were used. The authentic leadership scale is a scale consisting of four dimensions and 16 items. The answers given to the surveys were interpreted using the SPSS package program. When the results of the research are evaluated in general; It appears that the perception of authentic leadership has a significant effect on organizational commitment. Looking at the demographic results; According to gender, it has been determined that men have more authentic leadership perceptions than women. According to education level; It appears that authentic leadership perception and organizational commitment do not differ. When examining whether employees’ authentic leadership perceptions and organizational commitments vary according to their age; It is seen that the perception of authentic leadership and organizational commitment differ according to age. While employees between the ages of 36 and 40 have higher perceptions of authentic leadership; Organizational commitment of those between the ages of 41 and 45 was higher.

Plant breeding, often known as the science of plant development, is the study and practice of modifying a plant’s genetic makeup through a variety of breeding techniques to produce higher-quality, more prolific, and more resistant to harsh environmental circumstances. Classical breeding programs are indispensable techniques for increasing yields and improving plant characteristics, but they are progressing too slowly to meet the increasing food demand of the rapidly growing world population alone. Considering that the development periods of plants are generally long in traditional plant breeding, the opportunity to develop higher quality and more productive species that are more resistant to abiotic and biotic stress factors is very limited. Because there are multiple steps required in producing new plant varieties, including hybridization, selection, and testing, the process of creating a new variation takes several years. However, it is important to rapidly develop plant varieties with desirable characteristics to meet the increasing food demand of the rapidly growing world population, so the application of biotechnological methods integrated into plant breeding and combined with traditional methods can help reduce food shortages. Today, with the quick acceleration of biotechnology, molecular DNA marker technology has been developed in plant breeding and very important developments have been experienced. Thanks to the development of molecular tools for genetic research aimed at improving agricultural traits in plants related to crop yield, crop quality, or tolerance to adverse environmental conditions, we now have a much better understanding of plant genetics and the architecture and function of plant genomes. Therefore, it is of critical importance to revise current breeding procedures by incorporating molecular markers into breeding programs in the future.

The purpose of this study was to assess the anti-genotoxic potential of thymoquinone (TQ) against DNA damage in NRK-52E cells treated with high glucose using the comet assay technique single cell gel electrophoresis method. Cells were propagated by regular passages in in vitro conditions. TQ proliferative concentration (10μM) and IC25 (3rd-hour: 550 mM, 12th-hour: 240 mM, 24th-hour: 200 mM) and IC50 (3rd-hour: 760 mM, 12th-hour: 400 mM, 24th-hour: 280 mM) values for each hour of high glucose and were determined separately with MTT method. At these concentrations, the cells were divided into control(C), Thymoquinone (TQ), high glucose(G) and high glucose plus thymoquinone (GT) groups; It was incubated with the indicated substances for 3, 12, 24 hours. DNA damage was evaluated by applying the comet assay protocol and the results were calculated as DNA damage index (DDI). While DDI levels were observed to be significantly higher (p<0.05) in all groups administered high glucose compared to the control, a significant decrease was determined in all groups in which TQ was added along with high glucose. It was determined that high concentrations of glucose had genotoxic effects on kidney cells, and TQ administration together with high glucose, depending on concentration and time, had a significant effect on reducing DNA damage. However, it was concluded that the application of only thymoquinone significantly increased the DDI value compared to the control, and this was a data worth investigating in future studies. Additionally, TQ inhibited DNA damage. These results demonstrated the importance of TQ against nephrotic syndrome with its high antioxidant properties.

It is critical that Bangladesh faces water scarcity during the dry season, affecting lentil (Lens culinaris Medik.) yield and some yield components during seedling and flowering stages. Thus, a two-factorial pot experiments (The experiment comprises Factor A: three fertilization levels i.e. F1 = Control [inorganic], F2 = poultry litter-based compost [20 ton/ha], F3 = poultry litter-based compost [30 ton/ha]; Factor B: two irrigation levels such as W1 = 100% field capacity [FC] and W2 = 70% FC) were designed at Hajee Mohammad Danesh Science and Technology University, Dinajpur, from November 2018 to April 2019. And it was investigated how the poultry litter-based composts affected the morpho-physiology, yield and yield components of the lentil (BARI Masur-4) variety under different irrigation stress levels. Obtained results revealed that the tallest plant (30.7 cm at 75 DAS) and maximum branch number per plant (14.1 at 65 DAS), leaf chlorophyll a (0.30 mg/g), highest RLWC (70.28%), lowest proline content (1.57 µ moles g-1 FW), maximum number of pods per plant (39.4 at 75 DAS) and total grain yield (3.62 kg/m2) were recorded from compost F3 (poultry litter-based compost 30 tons/ha) with W1 (100% FC). Results also showed that the yield contributing attributes and yield of lentils were drastically reduced by water stress conditions with different rates of fertilization. In drought conditions (W2 = 70% FC), F3 (30 ton/ha poultry litter-based compost) fertilization produced the highest plant height (30.20 cm at 75 DAS), number of branches (11.5 at 65 DAS), stem dry weight (0.35 g), lowest proline (3.88 µ moles g-1 FW), highest pod number per plant (33.1), weight of 100-seed (2.36 g), total grain weight (2.77 kg/m2), harvest index (58.84%) compared to other fertilizations (F1 and F2). In summary, F3 (30 tons), a compost made from poultry litter, provides better soil conditions under drought conditions compared to F1 and F2 in the year of 2018-19 at the 0 and 20 tons/ha, respectively under the field conditions.

The aim of this study is to examine the marketing strategies of ornamental plants in Konya province, to determine the target markets that the sector can best serve, and to evaluate all the components that can contribute to the development of the sector on a provincial basis. In this context, the sales and marketing strategies of the companies producing and selling in Konya province were identified, suggestions for improvement were presented and the potential of ornamental plants in the region was determined. It is believed that the study will make an important contribution to the literature in this area. The main body of the research consists of ornamental plant companies selling in Konya province. In order to answer the questions of the study, a face-to-face survey was conducted with 32 operators representing the main mass. Porter’s Diamond model was used to evaluate the competitiveness. As a result of the analysis of the data, it was observed that the competitiveness of the companies is low and they are not looking for alternative markets. The lack of legislation defining the sector, the problem of organisation, the fact that they consider their income to be sufficient and the lack of information at the point of sale are the main obstacles to competitiveness. In fact, the main priority for a company is to gain a competitive position in order to increase profit margins. For this reason, companies need to evaluate the opportunities that may present themselves, develop strategies to add value to customers in the long term, and determine strategies to be close to the market in order to create new markets.

This study evaluates the effects of rabbit compost tea and NPK (15-15-15) fertilizer on the growth parameters of maize (Zea mays L.) at the Teaching and Research Farm of Ekiti State Polytechnic, Isan-Ekiti. The treatments were laid out in a randomized complete block design (RCBD) with three replicates. Each replicate consisted of four (4) treatments. Total land area measured 88 m2 (11 m by 8 m) with 12 plots, and each plot size measured 3 m by 2 m (6 m2) with 1 m alleyways between plots and replicates. The treatments and application rate were the control, rabbit compost tea at 400 l ha-1, a combination of NPK at 100 kg ha-1 and rabbit compost tea at 200 l ha-1, and the application of NPK (15-15-15) fertilizer at the rate of 200 kg ha-1, which was incorporated as the experiment's standard treatment. In the experiment, growth parameters of maize (Zea mays L.) were monitored and evaluated. Findings showed that the application of rabbit compost tea and NPK (15-15-15) fertilizer significantly (p < 0.05) increased the plant height, stem girth, number of leaves, and leaf area when compared with the control, especially when combined. According to this study, rabbit compost tea is an effective and sustainable organic amendment that smallholder maize farmers should consider using to improve growth and output.

Bu çalışmanın amacı, Siyez, Kavılca ve Dinkel gibi atalık buğday unlarının tam buğday unu yerine kaplama formülasyonlarında kullanılmasının tavuk nuggetların kalitesi üzerine etkilerini araştırmaktır. 4°C’de 7 gün depolanan derin yağda kızartılmış tavuk nuggetların kimyasal özellikleri, kalite karakteristikleri, pH, lipid oksidasyonu, renk, doku ve duyusal özellikleri değerlendirilmiştir. Hamur formülasyonları, nuggetların kimyasal ve kalite özelliklerini önemli ölçüde etkilediği, Dinkel unu ile kaplanan tavuk nuggetlarda kaplama kalınlığının, kaplama yapışma oranının ve pişirme veriminin en yüksek olduğu tespit edilmiştir. Kontrol örneklerinin renk puanlarının depolama süresi boyunca azaldığı, atalık unlarla kaplanmış tavuk nuggetların renk puanlarının değişmediği tespit edilmiştir. 0. günde Siyez unu ile kaplı örnekler en yüksek lezzet puanını alırken, 3. günde örneklerin lezzet puanlarının birbirine yakın olduğu tespit edilmiştir. Depolamanın 7. gününde kontrol örneği en düşük lezzet puanını almıştır. Siyez unu ile kaplanmış tavuk nuggetların sululuk puanlarının depolama süresince değişmediği, doku puanlarının arttığı tespit edilmiştir. Siyez ve Kavılca unu ile kaplanmış nuggetların genel kabul edilebilirlik puanları depolamanın 0. ve 3. günlerinde kontrol örnekleriyle benzer bulunmuştur. Doku profil analizinde, tüm nuggetlarin sertlik, yapışkanlık, elastikiyet ve sakızımsılık değerleri arasında anlamlı bir farklılık olmadığı belirlenmiştir. Depolama süresi arttıkça Kavılca unu ile kaplı örneklerin sertlik değerinin arttığı, çiğnenebilirlik değerlerinin azaldığı tespit edilmiştir.

Silaj grubu yemlerin, belirli kalite standartlarında muhafaza edilmeleri noktasında, bazen katkı maddesi kullanımı önemlidir. Bu çalışma kapsamında, non-toksik, antimikrobiyal, antifungal ve biyobozunur özeliklere sahip kitosan ve kitosanın asetik ve laktik asitle hazırlanan jelatinize çözeltilerinin, mısır silajında katkı olarak kullanım potansiyelinin araştırılması amaçlanmıştır. Kitosan ve organik asitli çözeltileri, mısır silajına iki farklı biçimde uygulanmıştır. Mısır silajına, %0,5 - %1,0 ve %2,0 oranlarında kitosan karıştırılmış ayrıca %2’lik asetik ve laktik asit çözeltilerine, %0,0 - %1,0 ve %2.0 kitosan ilave edilerek hazırlanan jelatinize karışımlar, %10 oranında mısır silajına püskürtülmüştür. Kitosanlı gruplarda, ham protein (HP), toplam sindirilebilir besinler (TSB) ve enerji değerleri (ME, NEL, NEM, NEG), diğer gruplara oranla yüksek bulunmuştur. NDF ve ADF’de çözünmeyen kalıntıların HP değerleri (NDICP, ADICP), %2,0 kitosanlı grupta daha yüksek bulunmuştur. Nispi yem değeri (NYD), kitosanlı gruplarda yüksek bulunmuştur. Besin maddeleri tüm gruplar arasında değişkenlik göstermiş, fakat değişkenliklerin gruplar arasındaki kolerasyonu uyumlu bulunmamıştır. Amonyak azotu (NH3-N) en fazla %2,0 kitosan grubunda görülmüştür. Bütirik asit sadece kitosanlı gruplarda tespit edilmiştir. Laktik, asetik ve propiyonik asit miktarları gruplar arasında farklılık göstermiş fakat bu farklılıklar katkı uygulama oranları nispetinde olmadığı belirlenmiştir. Küf sadece kontrol grubunda tespit edilmiş, uygulama gruplarında ise görülmemiştir. Laktik asit bakterileri (LAB) uygulama gruplarında, kontrol grubuna oranla daha az bulunmuş ve en az %2,0 kitosan grubunda görülmüştür. Enterobakteri grubu mikroorganizmalar uygulama gruplarında tespit edilmemiştir. Maya en fazla kitosanlı gruplarda görülmüştür. Sonuç olarak kitosan ve kitosanlı çözeltiler, bazı parametrelerde olumlu değişimlere sebep olsa da genel olarak fermantatif ve mikrobiyoljik kalite bakımından istenilen düzeyde iyileştirme sağlamamıştır.

Pamuk üreticileri ile yapılan anket çalışması Aydın’ın Koçarlı ilçesinde 2023 yılında 50 çiftçi ile birebir görüşülerek yürütülmüştür. Anket toplam 34 sorudan oluşmakta olup 17’si yabancı otlar ve bitki koruma sorunları ile ilgilidir. Çalışmada elde edilen bulgulara göre; üreticilerin tamamı erkektir ve %32’si ilk okul mezunudur. Çalışmada pamukta bitki koruma sorunları ile ilgili verilere bakıldığında; yabancı ot olarak en çok Kanyaş (Sorgum halepense) (%41) ve Köpek üzümü- Solanum nigrum en az ise Yapışkan otu- Setaria verticillata (%4) ile süpürge otu-Descurainia sophia (%2)’nun sorun olduğu görülmüştür. Çiftçiler zararlı olarak iki noktalı kırmızıörümcek (Tetranchus urticae) (%38) ve afit (%28)’in en yoğun olarak görüldüğünü ve problem olduklarını belirtmişlerdir. Çalışma sonunda çiftçilerin bitki koruma sorunları hakkında yeterince bilgi sahibi olmadıkları, bu konularla ilgili gerekli yerlere danışmadıkları, pestisit kullanımı ve uygulama sırasında veya sonrasında da gerekli tedbirleri almadıkları belirlenmiştir.
