Food consumption and related water resources in Nordic cities Full text

Many modern cities have strongly invested in the sustainability of their urban water management system. Nordic cities like Stockholm or Copenhagen are amongst pioneers in investments towards integrated urban water management. However, cities can never be fully self-sufficient due to their dependency on external (water) resources. In this paper, we quantify this water dependency with respect to food consumption in nine cities located in the five Nordic countries (Sweden, Denmark, Finland, Norway and Iceland), by means of the water footprint concept. Detailed urban water footprint assessments are scarce in the literature. By analysing national nutrition surveys, we find that urban food intake behaviour differs from national food intake behaviour. In large Nordic cities people eat generally less potatoes, milk products (without cheese), meat and animal fats and they drink less coffee than outside city borders. On the other hand, they generally eat more vegetables and vegetable oils and they drink more tea and alcoholic beverages. This leads consistently – for the six large Nordic cities Stockholm, Malmö, Copenhagen, Helsinki, Oslo and Reykjavik – to slightly smaller food related urban water footprints (−2 to −6%) than national average values. We also analyse the water footprint for different diets based upon Nordic Nutrition Recommendations (NNR) for these cities. We assessed three healthy diet scenarios: 1) including meat (HEALTHY-MEAT), 2) pesco-vegetarian (HEALTHY-PESCO-VEG) and 3) vegetarian (HEALTHY-VEG). This shows that Nordic urban dwellers 1) eat too many animal products (red meat, milk and milk products) and sugar and drink too much alcohol and 2) they eat not enough vegetables, fruit and products from the group pulses, nuts and oilcrops. Their overall energy and protein intake is too high. A shift to a healthy diet with recommended energy and protein intake reduces the urban WF related to food consumption substantially. A shift to HEALTHY-MEAT results in a reduction of −9 to −24%, for HEALTHY-PESCO-VEG the reduction is −29 to −37%, for HEALTHY-VEG the reduction is −36 to −44%. In other words, Nordic urban dwellers can save a lot of water by shifting to a healthy diet.

We investigated food supply mechanisms to a cold-water coral (CWC) reef at 260 m depth on the Norwegian continental shelf using data from a cabled ocean observatory equipped with Acoustic Doppler Current Profilers (ADCPs), an echosounder, and sensors for chlorophyll, turbidity and hydrography in the benthic boundary layer (BBL). Tidal currents of up to tens of cm s−1 dominated BBL hydrodynamics while residual currents were weak (∼10 cm s−1), emphasizing a supply and high retention of locally produced phytodetritus within the trough. A direct connection between the reefs and surface organic matter (OM) was established by turbulent mixing and passive particle settling, but relative contributions varied seasonally. Fresh OM from a spring-bloom was quickly mixed into the BBL, but temperature stratification in summer reduced the surface-to-bottom connectivity and reduced the phytodetritus supply. A qualitative comparison among acoustic backscatter in the ADCPs (600 kHz, 190 kHz) and echosounder (70 kHz) suggests that vertically migrating zooplankton may present an alternative food source in summer. Nocturnal feeding by zooplankton in the upper water column sustains downward OM transport independent from water column mixing and may dominate as food supply pathway over sedimentation of the phytodetritus, especially during stratified conditions. In addition, it could present a concentrating mechanism for nutritional components as compensation for the deteriorating phytodetritus quality. Overall, the observed patterns suggest seasonal changes in the food supply pathways to the reef communities. The moderating role of temperature stratification in phytodetritus transport suggests stronger dependence of the cold-water corals on zooplankton for their dietary requirements with increased stratification under future climate scenarios. This study demonstrates the added value of permanent ocean observatories to research based on dedicated campaigns and regular monitoring.

Rainfed farming needs to be supported by appropriate water harvesting technologies to mitigate the moisture stress during critical crop growth stages during the main season and to increase opportunities for irrigated horticultural production. With this aim, a wider scale of water harvesting technology dissemination program was carried out in some areas of Ethiopia since 2002/03. This research was conducted with the aim of evaluating the implementation of the program and its impacts thus far, and to identify the major technical and socio-economic constraints to the wider utilization of on-farm level household ponds. Detailed analysis of the case of model farmers show that acceptable economic returns are possible from pond technologies given that farmers are able to follow appropriate cropping patterns and irrigation techniques to improve water use efficiency. It is recommended that the technologies should be disseminated in the region in a more farmer participatory approach.
