Role of mastitis in cow's milk lipolysis (in Iraq)

Lipolysis which causes an undesirable flavour of milk, is the result of the activity of lipolytic enzymes and other factors, such as mastitis. The results showed: Direct impact on epithelial cells of the secretory tissues and their biosynthesis of milk constituents, an increase of the activity of enzymes which originate from somatic cells whose population increases with udder infection, and possible role of pathological bacterial enzymes in milk lipolysis, an increase in the concentration of the stimulating factors such as blood serum and the change in pH to provide optimal media for the activity of lipolytic enzymes
