Sandoval, M.E.C.
Azolla pinnata (Bangkok strain no. 5) was found to have a relatively high protein and fiber content. Nitrogen extraction data revealed that approximately 77% of the total nitrogen in the plant is protein in nature. Vitamin analyses revealed a low ascorbic acid amount but high provitamin A content in the form of B-carotene. A protein isolate was obtained from the plants which had a crude protein content of 36.5%. Amino acid and relative nutritive value analysis showed a low nutritive value due to a considerable deficiency in methionine and of lysine and isoleucine but to a lesser degree. The powdered azolla generally showed poor functional properties
