The two physiological processes, nitrate reductase activity and starch accumulation, reflect that the nitrogen reserve, at nitrogen levels of 60 to 120 kg/ha, was diminishing at 48 DAT. At two weeks before flowering (60 to 72 DAT), nitrate reduction continued to slow down (8.0 to 0.59 micron mole NO2/g FW/ha) while starch accumulation started to pickup (3% to 8%). Thus, the shift in metabolic process was at 60-72 DAT at all nitrogen levels. In this case, metabolic shift was accelerated either by low N or excessive irrigation which might have led to leaching
