Pork shows significant differences in its basic chemical composition, excepting collagen content, which results from the age of animals. Meat of males contains less fat and more water in comparison with females and castrates. Individual muscles differ in protein and collagen contents. The age and sex of animals have no influence on the protein efficacy ratio of the longissimus dorsi muscle
