Physical and chemical properties and chemical composition of various types of honey from the region of Bosanska krajina, SR Bosnia and Herzegovina (SFRY) were investigated. 52 samples of honey produced in spring and summer 1983 were investigated. On the basis of the obtained results the following conclusions were drawn: Variations of the water content and specific weight of honey were within the limits of usual values, but they affected the categorization of honey. The quality categories were from first to third. Interdependence of the water and free acids content in honey was found. Increase of the quantity of water in honey influenced the increase of the free acids content. The ash content in various types of honey differed and it influenced the colour of honey. In chestnut honey the total ash content was the highest (0.45%) and the colour was brown, while in dandelion honey the ash content was only 0.15% and colour was light-yellow. The average value of the total invert sugar of various types of honey varied from 75.6% to 81.9%. The fructose and glucose ratio was the best, i.e. with higher fructose content, in locust honey. Within the same type of honey, variations were notable under the influence of the production locality. In 7 samples increased saccharose content over the permitted limit of 5% was found.
