Food processing exists at the cottage industry level, where cassava farine, 'Toloma', candied fruit, banana and root flours, plantain chips and fruit wine are produced largely manually. Three commercial firms operate, both manual and fully mechanized plants, producing lime oil and juice, other fruit preserves, pepper sauce, cocoa powder and bay rum. Technical assistance is provided by the Produce Chemist Laboratory which has developed new products to pass on to entrepreneurs for commercialization. Other duties include certification and analysis of food products. The Ministries of Education and Agriculture have undertaken several training programmes
