Biochemical assessment of tubers of Nigerian Dioscorea species (yams) and yam peels

The proximate and mineral compositions of five yams (Dioscorea rotundata, D. alata, D. dumetorum, D. cayenensis and D. esculenta) were analysed after drying at 75 degrees C for 48 hrs. and milling into flour. All sections, 'head', 'middle' and 'tail' of the tubers had low fat, crude fibre, crude protein, P and Ca contents. Crude protein of peeled tubers ranged from 8.34 g/100 g dry matter in D. dumetorum to 4.33 in D. rotundata. The peels had higher crude protein (7.88-10.54 g/100 g D.M.) crude fibre and total fat and were better sources of K and Na, however they were also deficient in Ca and P which are consequently at a marginal level in the Nigerian diet
