The authors carry out a synthetic review based upon the latest studies about hare meat hygiene, especially about the chemical composition, the various methods of treatment and storage, the hygienic and qualitative aspects like pH value, microbiological findings, ammonia content and antimicrobial residues. These works were mainly carried out in the Federal Republic of Germany but can almost be placed above the situation in Piedmont, since Italy, like Germany imports hare meats from South America and East Europe. In conclusion, the authors hope for a better information of the consumers and for an evolutive hare breeding in order to rationalize the import and trade of hare meat
