Studies of two cultivars of plantains (Musa AAB Group) in relation to fruit development and composition

Lack of standard methods of assessing bunch maturity in plantains has resulted in arbitrary harvesting which is undesirable for marketing and storage. The study highlights a sampling technique involving removal of individual fingers from growing bunches for studying fruit development using such characters as finger length, diameter, peel and pulp rupture forces and ratios, % dry matter and chemical composition at various bunch ages. General increase in fruit development with age was observed but no marked differences during development of different hands. Chemical analysis of fruit composition has provided data on the nutritive value of plantain, and the stage at which such values are optimum. This enables quantification of maturity indices in plantains
