The atom absorption spectrometry is an important method of metal element determination. The publication not only informs on the national regulations concerning the maximum amount of metal content in foods but gives a short introduction on the basic principle of atom absorption spectrophotometry and on the structure of the equipment, it roughly outlines the methods of measurement and indicates the possibilities of determining metals in foodstuffs. With the introductions of some measurement data, the publication also informs on the accuracy of determining the various elements by atom absorption spectrophotometry.
