The possibilities of applying pectinlyase in fruit processing

After gamma irradiating Aspergillus foetidus moulds the authors performed stock selection and then with the fermentation of a significant pectinlyase-activity variant they prepared an enzyme preparate of technical quality. The objective of the examinations was to investigate the effect of juice yield increase and clarification of the pectinlyase-preparate with the application of various basic materials. Thus the enzymic treatment of grape mash and the clarification of apple juice were performed. The juice yield was measured after mash treatments, the turbidity, specific viscosity and dry matter content of the centrifuged mash were also determined. In the course of apple juice clarification pectine-disintegration was observed by the change of specific viscosity and of transmission in the samples, and by alcohol probe. The effectiveness of the experimental emzyme preparate (PL - 24) was compared with foreign preparates (Ultrazym - 100, Pectinol - D) Phylazim.
