Payment for milk on the base of the compositional characteristics in the countries with developed dairy industry

Systems of milk payment in the countries with developed dairy industry have undergone a great change in the last decade. The most important feature of it was the spreading of the system of paying on the base of protein content of milk. The growing importance of protein can be explained first of all by the change of the consumption structure. The variance of the systems of payment in the various countries is caused mainly by the differences in the consumption structures. According to a more or less accepted opinion the price of protein and fat should be obtained by deducing it from the price of the final product. The experiences gained up till now show that introduction of the protein-based price is not fallowed only by a considerable delay by the increase of protein content, while differences in the producers' income are appearing soon. Usually the milk payment on the basis of protein content has been introduced first in special districts, for example in the surroundings of cheesemaking factories.
