[Effect of pre-slaughter and slaughter stress on biochemical changes in muscle tissues of bulls]

Perimortal and postmortal changes in the levels of biochemical values (lactate, glycogen, adrenaline, noradrenaline, R-value) occurred in muscle tissues of bulls under stress due to pre-slaughter manipulation were studied. The experiments were done in two replicates. In both cases considerable increase of lactate amount, decrease of glycogen content and increase of R-value were found 48 hours post-mortem. One hour post-mortem changes of indices were slower. It confirms a substantially slower glycogenolysis in cattle as e.g. in pigs. Adrenaline and nor-adrenaline was observed only in time of stunning of bulls.
