Improving the shelf life and process efficiency of a malted cereal beverage

The processing parameters and storage life of a local non-alcoholic malted drink made from corn, 'Nmeda' are discussed. The traditionally made drink has a short shelf life of 3-7 days and prepared under poor hygienic conditions. Under the Kellog Program, the processing was investigated with modern technology to ascertain the quality indices of the product, processing parameters such as extraction time and temperature, so as to curtail fuel consumption, shorten processing time, and develop a product that does not depend on refined sugar for colour and sweetness
