Describes the problems experienced by the Government to boost viability of industry and handling of its by-catch. Briefly describes a project undertaken with International Development Research Centre (IDRC) which focused on assessment of abundance and composition of species, product development, market studies, identification of consumption patterns of imported fish and quality control. Initial results indicated the need for change in textural characteristics of products and the establishment of a small scale processing plant is noted. Future expansion of current levels of operations includes earlier collection and improved handling, continued product research and development and consumer education. A CARICOM sponsored study conducted in Antigua, Barbados, Grenada, Guyana, St. Lucia and Trinidad and Tobago reported that fish is a dietary staple and fresh fish preferred to salted.
