Preliminary research of the changes of chicken egg shell in fine structure and four kinds of element content during incubation

The change in structure of egg shell's inner face during incubation were observed by electron microscopic scanning. Inner face structure of egg shell underwent great change during the period of the 10-14th day of incubation, thicker and longer protein fibres became thinner and shorter, and CaCO3 particulates in the fibre net became smaller and fewer and finally disappeared. Ca, Mg, Fe and Zn content in the egg shell during incubation were analysed by ICP. Ca and Mg, which constitute the majority of the egg shell component, decreased gradually, and the former dropped sharply from 18th day to 21st day of incubation
