Determination of ethyl-carbamate (urethane) content in fruit brandies by N selective detection using capillary gas chromatography

The average ethyl-carbamate content of the 55 apricot brand samples examined was 0.89 mg/l (max. 6.47), while that of the 34 plum brand samples 1.51 mg/l (max. 5.50). Such high values only occurred with brandies produced from stone fruit, other brandies remained much below this level in respect of both average and maximum. A detailed examination of the data showed that the frequency curve for plum brandies is "flatter", reaching its maximum at a higher urethane content than for apricot brandies.
