Influence of transportation of pigs and resting period prior to slaughter on selected changes in their blood and muscles

Muscle defects occurred more frequently in pigs taken from commercial farms. Resting period did not result in a substantial decrease in the incidence of low quality muscles. This might indicate their higher susceptibility to stress. Pigs from small farms were characterized by slower rate of glucolysis. Blood methemoglobin and muscle metmyoglobin content was generally higher when animals were slaughtered without resting period, what could be due to an accelerated glycogenolysis
