Comparison of quality parameters in triticale and wheat

Hagberg falling number and the micro-sedimentation test with sodium dodecyl sulphate (SDS) were determined at EMBRAPA-CNPT, and compared with other quality tests carried out at FUNDACEP, on grain samples of 18 triticale genotypes and two wheat cultivars from the Brazilian Triticale Yield Trial carried out in Cruz Alta in 1989. Wheat had higher scores for all assessed parameters and correlations between 15 parameter pairs were highly significant. For the triticale genotypes, the correlations were significant only between the two sedimentation tests (SDS and standard Zeleny), between each sedimentation test and alveograph, and between alveograph and flour protein content. Bread volume did not correlate with sedimentation and alveograph, as in former years, probably due to high amylase activity of most triticale lines.
