The following results were obtained when determining the tocopherol contents of oils: cold-pressed sunflower oil 890, refined sunflower oil 600-800, refined soya oil 1270, Kukola pressed maize germ oil 1610, Meinl cold-pressed sunflower oil 810, Coroli refined sunflower oil 720, linseed oil 720, tomato seed oil 950, cherry seed oil 700, apple seed oil 1300, raspberry seed oil 3420, sage oil 1800, peanut oil 450 mg/kg. Studies were also made on the degradation taking place in sunflower oil during heat treatment and its effect on tocopherol and linoleic acid contents. The heat treatment was carried out at 190 C/degrees/ for 24 h in 6-h periods using a 2.5 l volume of oil. During the 4x6 h of periodic heating the tocopherol content was reduced by 56 o/o and the linoleic acid content by almost 20 o/o. There was a considerable increase in the UV absorption characteristic of the oxidation state. A close correlation was found between UV absorption and the values of tocopherol and linoleic acid content
