Moisture content and freezing temperature have an influence on the volume increase taking place as the result of freezing in fruit and vegetables. The volume increase at -20 C/degrees/, -30 C/degrees/ and -40 C/degrees/ differed from one product to the other: e.g., for apples this increase was 5.6, 6.6 and 9.2 o/o, for cauliflower 3.8, 4.8 and 7.3 o/o, and for potatoes 4.0, 5.2 and 7.1 o/o, with an average value of 4.5-8.2 o/o. The greatest volume increase intervals were recorded for Jonathan apples, plums and carrots. The temperature dependence of volume increase was evaluated by means of regression analysis
