Effect of triticale malting time on laboratory malts' and worts' features

The vegetative conditions have got the greater influence on differentiation of the grain and triticale malts quality than the variety features. The grain and triticale malts meet the normative requirements for barley grains and malts. The features of triticale worts such as too high viscosity and nitric compounds content cannot be reduced seriously through the change of malting time. Dilatation of malting time from 6 to 8 days reduces worts viscosity negligibly and causes high increment of soluble nitric compounds. 6, 7, 8 days triticale malts have got the greater extractivity and often twice superior diastatic activity in comparison with the barley malts
