On the basis of the results obtained it can be concluded that the high level of N-fertilization applied during the cultivation process increased the mean weight of potato tubers, tendency to darkening of potato tuber, the content of total nitrogen, protein, amide, amino acid and nitrate nitrogen, decreased the content of starch and increased tendency to deterioration of chips colour. The irrigation applied during the cultivation process decreased the content of nitrogen compounds in the potato tubers and increased the tendency to darkening of potato tuber. Chips made of raw potato tubers just after the harvest date were of high quality. They had usually light suitable colour, nice flavour, crisp consistence and contained less than 40 percent of oil
