Meat quality of free-living game from free nature (fallow deer, red deer, roe buck, boar)

Chemical composition, nutritive value, physical, and rheological quality of venison was tested. There were no differences in meat quality between the observed kinds. Venison has a high protein content (23.2-24.1 percent), low content of intramuscular fat (1.3-1.4 percent), favourable content of mineral substances (0.9-1.1 percent) and a low cholesterol (1.2-1.4 mg.g-1). The occurrence of DFD meat was not observed. Venison properties were close to the values of the meat from carcass cattle.
