Reflection of the feed polyunsaturated fatty acid (PUFA) content in porcine backfat and intramuscular fat

The influence of the feed PUFA (polyunsaturated fatty acid) content on backfat consistency, oxidative stability and fatty acid pattern, as well as on intramuscular fat content and composition is investigated. Although in the literature proposed 15 per cent polyunsaturated fatty acid limit in backfat is exceeded by 5 per cent, no severe negative effects on consistency or storage stability appear in this experiment. Correlations of 0.9 are recorded between linoleic and linolenic acid in backfat and in feed. After correction for backfat thickness, these values decrease to 0.8. The intramuscular fat content is not influenced by the feed, the intramuscular PUFA on the contrary correlates very well with the feed PUFA (at least 0.8).
