The principle of the aqueous enzymatic oil extraction is expounded. This technological process offers a new way for the processing first of all of raw materials with high oil- and water content (olive, coco, avocado). The maize-germ, a by-product in the starch industry, usually contains 50 o/o water and 20 o/o oil, and for this purpose the development of such a technology would be advantageous in several aspects. Laboratory scale results suggest that the enzymatic extraction is promising for processing this kind of by-product due to its oil yield similar to that of the traditional technology. During the oil extraction a pre-refining occurs simultaneously, and so we can get in one step an oil suitable for physical refining
