Arabu, J.M.P.
This study was carried out to investigate the possibility of processing adjunct baby food from cereals and legumes for infants feeding after the fifth month of their birth in addition to breast milk or infant milk formulas. Various proportions of wheat, chickpea and lentil were used in food formulations on the basis of protein content, so that each formula contains about 20 protein. Food formulas were processed and preserved by canning and dehydration. The effect of addition of lecithin, sugar and vanilla to improve the selected processed food formulas was studied. Chemical analysis of the processed food formulas was carried out to determine the content of their important nutrients
