This study was especially designed to determine some of the physicochemical characteristics of starches from two different varieties of corn. Since different varieties of maize differ in terms of their characteristics, therefore, their starches also differ. This study was only good for one month and was conducted at the Food Chemistry Laboratory, Department of Food Science and Technology [College, Laguna, Philippines]. The significance of the study was to give some of the physicochemical characteristics and determine the specific applications of these starches. Some of the physicochemical properties which were determined were the granules shape, amylose content, least gelling concentration, paste viscocity, and gelatinization temperature
