Enzyme changes of triacylglycerols

Possibilities of biomodification of simple lipids (fats and oils) by the lipase effect are presented. Enzyme-catalysed reactions of transesterification and esterification allow to obtain highquality fats and oils. These fats with desirable physical, chemical and biological characteristics may find their use not only in food industry, but also in pharmaceutical and cosmetic industry. The possibility of lipase application for enzyme hydrolysis of fats for use the preparation specific fatty acids, partial glycerols or glycerols is also discussed.
