Trends of sugar content development in carrot as affected by variety and year
1995

In the development of carrot flavour volatile and sugars play a decisive part. The total amount and composition of sugars found in carrots depend on genetic factors as well as on growing conditions. The sugar content of 7 carrot varieties were tested after harvest during 4 year. Differences were found the total and reducing sugar contents among varieties and their values in different years. The variability of sugar content within varieties was also studied in 21 inbred, male-sterile (S2 generation) lines in 1995. Considerable differences were found in reducing sugar and total sugar contents and in the reducing sugar/total sugar ratio in lines of different origin as well as in related lines. Tests can help us to breed for sugar content in carrots
