Investigation of the conditions for starch maltogenic conversion

The possibilities of corn starch conversion to maltose syrup (starch hydrolysate with high maltose content) were investigated. For maltogenic starch hydrolysis special, so called, maltogenic enzymes were used. Fungal origin Fungamyl and bacterial origin Maltogenase, under optimal and specific reaction conditions, acting as endo-maltogenic- and exo-maltogenic amylases, produced mainly disaccharide maltose. Acid liquefied corn starch (dextrinized), from industrial acid-enzyme crystalline dextrose technology, as starting substrate for maltogenic conversion was used. Hydrolysis (maltogenic amylolysis) was carried out in laboratory reactor. The effect of the DE value of starting substrate, type and dosage of enzymes and reaction time on degree of maltogenic conversion were investigated. Based on it, the relevant process parameters for normal maltose and high maltose syrups technology (acid-enzymes) were determined.
