Study on the preparation of sucroserisinoleic at variable time of reaction in dimethyl formamide solvent

Sucroserisinoleic ester was made by the reaction of sucrose and methylrisinoleic ester. The reaction took place in dimethyl formamide solvent. Later the solvent was redistilled and reused for the next experiment. The duration of esterification varied into 6, 9 and 12 hours and it was observed that the yield of sucroserisinoleic increased along with the additional time of reaction. Another important experiment was the temperature of the reaction, it was found that 80 degrees C was the optimum temperature since browning reaction will take place if the temperature was higher. The HLB value is in the range of 15-17.5, hence the application of the ester is suitable for oil/water emulsifier or as a solubilizer
