It was found that, neither watering nor high nitrogen fertilization had affected the potatoes dry matter and starch content, though they modified the concentration of some minerals in the tubers. The levels of nitrogen and nitrates had significantly increased in potatoes, which had been intensively fertilized with nitrogen, but the both levels had decreased due to sprinkling irrigation. High doses of nitrogen had been stimulating levels of potassium, sodium, protein and ash in tubers, but decreased the fat content in them
